Ingredients:
- Pre-made Pie Crust (9 inches)
- Fresh Strawberries
- Cornstarch
- Granulated Sugar
- Strawberry Jello (3 ounces)
- Water
- Whipped Cream (for serving)
How to make strawberry pie:
- Step 1. Prepare the pie crust. Bake the pie crust based on the package instructions and let it cool on a wire rack. It needs to be completely cool before adding the pie filling to it.
- Step 2. Clean and slice the strawberries. Then place them in the pie crust. We prefer the berries sliced but you can cut them in half if you prefer for larger pieces.
- Step 3. Mix together the sugar and cornstarch. Stir together the sugar, cornstarch and water in a small saucepan. Bring the mixture to a low boil and cook for 2-3 minutes until the mixture starts to thicken using medium heat. The cornstarch will help to thicken Strawberry Pie.
- Step 4. Remove from heat and add jello. Remove the pan from the heat and stir in the strawberry Jello mix. Whisk until you dissolve the mixture.
- Step 5. Allow to cool and pour into pie shell. Let the mixture cool for 10-15 minutes and then pour the mixture over the remaining strawberries in the pie crust.
- Step 6. Place in the refrigerator. Chill the pie in the refrigerator. It takes about 3 to 4 hours for the jello mixture to set.
- Step 7. Top with whipped cream. Then the pie is ready to serve topped with whipped cream.
Serving Suggestions:
Slice and top each serving with whipped cream. If you have extra berries, add a few for garnish. It will be so pretty!
We prefer to top each serving with whipped cream instead of the entire pie. This makes it easy to store the pie if you don’t plan to serve the entire pie at once.
Storage:
Refrigerate the leftovers covered for up to 4-5 days. Cover with plastic wrap so it will stay fresh.
The pie crust will soften the longer it is in the fridge. We do not recommend freezing this pie. The texture of the jello mixture will change once frozen and thawed.
Variation:
- Pie Crust Recipe. Substitute store bought for your favorite pie crust. Sometimes, we use graham cracker crust to make this fresh Strawberry Pie. It is delicious and easy if you prefer a no bake option.
- Homemade Whipped Cream. If you have a few extra minutes, make homemade whipped cream to garnish the pie with. It is very simple and so delicious.
- Sugar free jello. Feel free to substitute sugar free jello in this recipe.
- Other fruit. This pie recipe is also great with peaches. Simply substitute fresh sliced peaches for the strawberries.
Also, use peach jello with peach pie. You can also use blueberries, raspberries or blackberries.
Can you use frozen strawberries?
No, we do not recommend using frozen berries. They have a lot of extra moisture that will change the texture of the pie. It will be runny and not taste the same.
Fresh is definitely best in this recipe.
Choosing the best berries:
This recipe is best with sweet, ripe strawberries. Try to select berries that do not have any white around the stem. This means that the berries were not picked when they were ripe.
The flavor of the pie is better when you use in season ripe berries.
