Strawberry Delight is a creamy, delicious dessert recipe that is an easy no bake dessert. It has layers of strawberries, cream cheese and a graham cracker crust.

What is Strawberry Delight?

Strawberry Delight is known as a dessert salad. You will find this easy layered strawberry dessert at many potlucks, church gathering or at your holiday parties. It is perfect for a crowd.

The layers consist of a homemade graham cracker crust, then topped with a creamy cheesecake layer. Strawberries are sliced and mixed with sugar and strawberry gelatin to make an amazing strawberry layer.

Strawberry Delight Dessert is then topped with a Cool Whip layer, crushed graham crackers, and fresh sliced strawberries. Easy, creamy, and delicious layered dessert that all strawberry fans love.

Ingredients

Ingredients needed - graham cracker crumbs, butter, sugar, cream cheese, powdered sugar, vanilla, strawberries, cornstarch, water, strawberry gelatin, cool whip

For the Crust

  • Graham Cracker Crumbs. You can use sheets of graham crackers or buy the crumbs at the grocery store.
  • Butter. Real butter is best.  

Cheesecake Layer

  • Cream Cheese. It is easier to mix when softened at room temperature and the filling will have a smoother texture.
  • Cool Whip. You can also make Homemade Whipped Cream Recipe.

How to Make Strawberry Delight

  • Step 1. Prepare the Crust – Crush the graham crackers in a food processor until they are turned into fine crumbs.

Step 2. Mix together Crust Ingredients in a large mixing bowl.

Step 3. Then melt the butter and add the sugar. Stir to combine. Then press the mixture into the bottom of a 9X13 pan. Place the pan in the freezer for 30 minutes.

Step 4. Beat the cream cheese, powdered sugar and vanilla extract in a medium bowl.  Using a hand mixer, stir until all the ingredients are combined.

Step 5. Then gently fold in the whipped topping with a spatula or wooden spoon to the cream cheese filling.  Spread this mixture on top of the cooled crust.  Refrigerate while you prepare the next layer.

Step 6. Place the diced strawberries on top of the cream cheese layer.

Step 7. Make the Strawberry Gelatin. Add the sugar, cornstarch and water to a small saucepan.  Heat to a simmer but not a boil and allow the mixture to thicken.  Then remove from heat and stir in the gelatin mix. Continue to mix (so the gelatin doesn’t set) and allow the mixture to cool.

Step 8. Then pour this mixture on top of the strawberries in the 9X13 pan.  Cover and chill the Strawberry Delight Recipe for at least 2 hours but I like to chill overnight.

Step 9. Spread the cool whip topping on top of the strawberry jello layer. Top with the reserved diced-up strawberries and graham cracker crumbs. 

FAQs

Can I use Frozen Strawberries?

Yes, if you do not have fresh strawberries and all you have is frozen, they will work too. While they are frozen, slice the strawberries or buy the already slice strawberries.

We recommend defrosting the frozen strawberries completely. Then drain the strawberries, making sure that there is no extra liquid. If you do not drain them, then the strawberry layer may not set up correctly.

How to Serve?

The dessert will need to chill for at least 2 hours before serving.  When serving, run a knife under hot water before cutting into the dessert.  Make sure to clean the knife after each cut. It’s also great with No Churn Strawberry Ice Cream.

How to store?

Refrigerate leftovers in an airtight container covered for up to 1 week. This cream, strawberry dessert is hard to resist, so leftovers are hard to come by.

But we do recommend only storing for up to a week. The crust will get to soggy and the layers will begin to be mushy.

Pie Crust Variations

You can definitely swap the crust to what you have on hand or just to change the flavoring. Here are some of our suggestions:

  • Chopped Pecan Crust – Mix together flour, melted butter and chopped pecans. This makes an amazing crust.
  • Pecan Sandies Cookies – With your food processor, crush up pecan sandies and mix together with the butter and sugar.
  • Vanilla Wafer Cookies – Crush up Vanilla wafers and mix together with butter sugar.
  • Crushed Pretzels – Crushed Pretzels make an amazing crust. We like making the Strawberry Pretzel dessert with crusted Pretzels.

Expert Tips

  • Freeze Crust – After preparing the crust and pressing it into you 9×13 baking dish, place in the freezer for at least 30 minutes.
  • Reserve Graham Cracker Crumbs – After crushing the graham crackers, keep at least ¼ of a cup of graham cracker crumbs. The sprinkle on top of the finished dessert.
  • Cover Entire Pan – When pressing the graham cracker crust into the baking dish, make sure the layer is evenly distributed over the entire pan. This way each bite will have each layer completely.
  • Cool Cheesecake Layer – While preparing the strawberry layer, cool the cheesecake and graham cracker layer in the refrigerator.
  • Chill Dessert – The dessert needs time to fully set. Don’t try cutting it early, or partially set. You will have a mess and will not get the pretty squares.
  • Make in advance – You can make this dessert in advance. I love this because it makes it even easier if you are taking it to an event. All you have to do is grab and go
  • Lemon Juice – Strawberry and Lemon go great together, you can add in some lemon juice to the mixture.

  • 1 1/2 cups Graham Cracker Crumbs 11-12 sheets of graham crackers
  • 1/2 cup Butter melted
  • 1/3 cup Granulated Sugar

For the Cheesecake Layer:

  • 1 8 oz Blocks of Cream Cheese, softened at room temperature
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla
  • 8 ounces Cool Whip

For the Strawberry Layer:

  • 1 lb. Strawberries clean and diced
  • 1/2 cup Granulated Sugar
  • 2 Tbsp Cornstarch
  • 1 cup Water
  • 1 box Strawberry Gelatin 3.4 oz

For the Topping:

  • 8 ounces Cool Whip

Instructions

For the Crust:

  • Spread this mixture out on top of the cooled crust.
  • Refrigerate while you prepare the next layer.

  • Place the diced up strawberries on top of the cream cheese layer (reserve some for the topping).
  • Then add the sugar, cornstarch and water to a small saucepan.
  • Heat to a simmer and allow the mixture to thicken.
  • Then remove from heat and stir in the gelatin mix.
  • Continue to mix (so the gelatin does set) and allow the mixture to cool to room temperature.
  • Then pour this mixture on top of the strawberries in the 9X13 pan.
  • Cover and chill the cake for at least 2 hours but you can also chill overnight if you prefer.

For the Topping:

  • Spread the cool whip on top of the gelatin layer and top with the reserved diced up strawberries and graham cracker crumbs.
