Pineapple Upside Down Dump Cake

We love Pineapple desserts and Pineapple Upside Down Cake is such a classic treat. I wanted to try a dump cake version but still be able to enjoy all the flavors we love. These results were a huge success, and the entire family loved this cake.

What is a dump cake?

It is a type of dessert that involves simple ingredients and very little preparation. It is a cake similar to cobbler and normally prepared with a cake mix, fruit, butter and other pantry staples.

The process is simple and involves dumping the fruit or filling in a pan and then topping with cake mix and more. If you can toss a few ingredients into a pan, you can make this cake.

Ingredients: 

  • Crushed Pineapple, well drained
  • Maraschino Cherries, well drained
  • Yellow Cake Mix
  • Light Brown Sugar
  • Unsalted Butter, melted
  • Vanilla Ice Cream, for serving

How to make pineapple upside down dump cake:

  • Step 1. Preheat the oven and prepare the pan. Preheat the oven to 350 degrees F.  Spray a 9X13 baking pan with a non-stick cooking spray.
  • Step 2. Add the fruit. Pour the drained crushed pineapple and cherries into the baking pan.  Spread it out as evenly as possible.
  • Step 3. Top with brown sugar and box cake mix. Sprinkle the brown sugar and then sprinkle the dry cake mix on top evenly.
  • Step 4. Drizzle the melted butter. Slowly pour the melted butter over the top of the cake mix.  Do your best to coat as much cake mix and butter.
  • Step 5. Spread in the pan and bake. Bake for 40-45 minutes until the pineapple is bubbly and the edges of the cake are golden brown.
  • Step 6. Let the cake cool. Allow the cake to cool for approximately 15 minutes and then serve warmed topped with the vanilla ice cream and enjoy!

How to serve?

We enjoy this topped with vanilla ice cream. You can also top with whipped cream.

How to store pineapple upside down dump cake:

Cover the cake with a lid if your pan has one. If not, you can use plastic wrap or foil.

Refrigerate the leftover cake covered for up to 5 days. Reheat the leftovers in the microwave when ready to enjoy.

How long will pineapple upside down dump cake last?

If stored properly, it will last up to 5 days. We normally eat ours much faster though. The entire family loves it.

Can you freeze dump cakes?

Yes, this type of cake can be frozen. Cover with plastic wrap and again with foil to ensure freshness. You can also place the cake inside an airtight container with a lid.

Freeze up to 3 months. Allow to thaw overnight in the fridge when ready to serve. Reheat in the oven or microwave.

Upside Down Pineapple Dump Cake Tips:

  • Don’t mix. Do not mix together any of the ingredients in the pan.  Layer the ingredients and then bake.  Just simply dump and go without any mixing required.
  • Nuts. You can add chopped nuts to this recipe as well.  Add them with the brown sugar on top of the crushed pineapple.  I love adding chopped pecans or walnuts.  
  • Cake Mix. We used yellow cake mix but white cake mix can be substituted. Feel free to use Betty Crocker, Pillsbury, Duncan Hines or any brand you like.

Can I use pineapple tidbits?

Yes, absolutely! Pineapple Tidbits will be a tasty substitute in this cake recipe.

Just make sure to drain the fruit before using. The texture will be a bit different as the fruit is larger but still delicious.

Can I use white cake instead of yellow cake mix?

Feel free to substitute white cake mix for the yellow cake mix in this recipe. It is an easy substitute and one that pairs easily with the other ingredients.

I often use what I happen to already have in the pantry or can get on sale at the grocery store. Both are delicious.
