Ingredients

Ingredients for recipe - corn syrup, unsalted butter, cereal, marshmallows, vanilla extract.
  • Corn Syrup. You can substitute honey, but the taste will be a little different than Starbucks.
  • Unsalted Butter. Make sure to use real butter.
  • Rice Krispies Cereal. It needs to be fresh for best taste and texture.
  • Mini Marshmallows. The mini size is best.
  • Pure Vanilla Extract. Always use pure vanilla extract.

Find the entire ingredient list at the bottom of the page.

Step By Step Instructions

  • Step 1. Prepare the baking dish. Grease a 9X13 baking pan and then set aside.
Melted butter in saucepan.

Step 2. Use a large saucepan and melt butter and corn syrup over medium heat. Continue to heat until butter is melted.

Step 3. Pour the marshmallows into the melted butter. Don’t forget to reserve about 6 ounces of the mini marshmallows for later. Heat the mixture until the marshmallows are melted. You will need to stir constantly with a spatula.

Step 4. Remove the pan from the heat. Stir in the cereal until combined. Then mix in the remaining mini marshmallows.

Step 5. Spread the mixture into the prepared pan.  I like to use a piece of wax paper to press the Rice Krispies into the bottom of the pan. It is helpful to spray the wax paper with cooking spray so that it doesn’t stick. Allow to cool and cut into bars. You can also top with sea salt if desired.

Storage

Store leftovers in an airtight container up to 2-3 days.

Pro Tips

  • Do not refrigerate the bars. They are best left to cool at room temperature so that they remain gooey and delicious!
  • Don’t skip the extra marshmallows. This makes the recipe taste just like Starbucks.
  • Fresh cereal and marshmallows. If you use cereal or marshmallows that are stale, it will make the texture hard.
  • Don’t press the mixture too hard. Pressing too hard into the pan will make the bars hard.
