Ingredients

Ingredients for Starbucks snowman cookies - flour, butter, white chocolate, vanilla.

Cookies

  • All Purpose Flour. Make sure to use all purpose and not self-rising flour.
  • Unsalted butter. Softened before using. This will make it easier to combine the dough.
  • White Chocolate. Use a good quality chocolate. You will taste the difference!
  • Vanilla Extract. It’s worth it to use pure vanilla extract in baking.

Royal Icing

  • Egg whites. You can use the yolks for something else or toss them.
  • Gel Food Coloring. You will need orange, brown and blue.
  • White Sugar Sprinkles. This will make the cookies like they have snow on them.

  • Various colors. Feel free to dye the icing different colors.
  • Glitter. You can use glitter icing to decorate the cookies. The scarves would be pretty with glitter.

Instructions

FOR THE COOKIES:

  • Melt the white chocolate by placing it in a microwave safe bowl and heating it in 20 second intervals, stirring after each interval, until fully melted.
  • In a medium size mixing bowl, whisk together the flour, baking powder and salt.  Then set aside.
  • In a separate bowl, beat together the melted white chocolate, butter and powdered sugar until creamy and light and fluffy.
  • Add in the eggs and mix until combined.  Then add in the vanilla extract.  Continue mixing.
  • Slowly add the dry mixture to the butter mixture. Mix until just combined.  Be careful not to over mix.
  • Cover and refrigerate the dough for 1 hour so that the cookie dough will firm up and will be easier to work with.
  • Roll out the dough onto a lightly floured surface until the dough is approximately ½ inch thick.  Then use a Snowman cookie cutter to cut out the cookies.
  • Continue this process until all the dough is formed into the cookies.
  • Preheat the oven to 350 degrees F.  Line the cookie sheet with parchment paper. Using a metal spatula move the cut cookies to the parchment lined cookie sheet.
  • Bake for 10 minutes until the cookies are lightly browned around the edges (just a slight change of color).
  • Let the cookies cool on the pan for 5 minutes and then carefully move the cookies to a wire rack to cool completely. Make sure that the cookies have cooled completely before applying the frosting or it will just melt off.

FOR THE ICING:

  • Combine all ingredients (except your food coloring) in a mixing bowl mixing on medium speed for 4 minutes.  If icing is not stiff enough add ¼ C powder sugar.
  • Portion out a small amount of the icing into separate bowls to dye brown, orange and blue for the decorations.
  • Use the remaining icing (the white icing) to coat the cookies for the white portion of the cookies.
  • Sprinkle the white sugar on the bottom of the cookies to look like snow. Then let that icing dry before you add the decorations.
  • Place the other colors of icing into piping bags with a tip (I used a Wilton #5 tip).  Then use these colors to make the face, buttons, ear muffs and scarf.
  • Allow the icing to cool completely and then the cookies are ready to serve and enjoy!  Then the cookies are ready to serve and enjoy!

cookies are super good! if you want them to really taste like the starbucks cookies though, i recommend skipping the royal icing and doing melted white chocolate instead.
