I love quick and frugal snacks for my family. I have been making these easy Cinnamon Toast Crunch Bars for at least 10 years. They are made just like my favorite Rice Krispie Treats Recipe but with cinnamon toast crunch cereal.

  • Salted Butter. I recommend real butter. If you use unsalted butter, add a pinch of salt to the mixture.
  • Mini marshmallows. The marshmallows need to be fresh too.

  • White Chocolate. Drizzle melted white chocolate chips on the bars.
  • Vanilla Extract. It’s optional but you can add 1 teaspoon of vanilla extract to the melted marshmallow mixture.

Step 1. Prepare a 9X13 baking pan with non-stick cooking spray.

Step 2. Next, use a microwave-safe bowl. Add the butter and marshmallows to the bowl.

Step 3. Melt in 30 second intervals. Make sure to stir after each interval until melted and combined.

Step 4. Carefully fold in the cereal into the melted marshmallows and butter.

Step 5. Combine with a rubber spatula until the cereal is coated in the melted marshmallow mixture. Pour into the prepared pan. I like to take a piece of waxed paper or parchment paper and use it to press the mixture into an even layer into the pan. This helps my hands not to get so sticky.

Step 6. Finally, let the bars cool completely at room temperature. Then cut into bars and serve.

Storage

Do not store these treats in the refrigerator. They are best left to cool at room temperature so that they remain gooey and delicious! Cover the leftover cereal treats and store inside an airtight container at room temperature up to 1 week.

I suggest placing parchment paper in between the layer of cereal bars. This will help them not to stick to each other.

  • Line the pan. You can also line the baking dish with aluminum foil or parchment paper. Then spray with cooking spray. This will make it easy to lift out of the pan and cut the bars.
  • Cook in intervals. Melt the butter and marshmallows in 30 second intervals to prevent burning the mixture.
  • Press gently. Don’t push the mixture too hard into the pan. This will change the texture and make the bars hard.
  • Fresh ingredients. Always use fresh cereal and marshmallows for the best taste and texture.
  • Coat your spoon. I find it easier to combine if I spray the spoon before mixing with cooking spray.

You can freeze the bars up to 2 months inside a freezer container. Allow to thaw overnight in the fridge when ready to serve. The texture may change slightly but they will still be delicious.

Why are the bars hard?

Pressing the mixture too firmly into the pan will result in bars that are hard. Also, overcooking the marshmallows or melting on high can make the texture of the bars hard.

Can I make these on the stove top?

Sure! Melt the butter and marshmallows on medium-low heat using a large pot.
