Ingredients

Ingredients for Strawberry Honey Bun Cake - Strawberry cake mix, eggs, cream cheese, brown sugar, cinnamon, powdered sugar, milk, strawberry extract, red food coloring.

Cake

  • Strawberry Cake Mix. You can use any brand you prefer.
  • Eggs. Large eggs are recommended.
  • Cream Cheese. Softened at room temperature.
  • Brown Sugar. Homemade Brown Sugar Recipe is very easy to make.
  • Ground Cinnamon. You can adjust this to taste.

Icing

  • Confectioners Sugar. Sift the powdered sugar to remove any lumps.
  • Milk. I like to use whole milk.
  • Strawberry Extract. This gives the icing the perfect amount of strawberry flavor.
  • Red Food Coloring. You don’t have to add this, but it makes the icing so pretty.

Additions and Substitutions

  • Cake Mix. You can also use white cake mix or vanilla cake mix.
  • Extract. Swap the strawberry extract for vanilla extract if you prefer a plain glaze.

Step By Step Instructions

  • Step 1. Go ahead and preheat the oven and prepare the baking dish. Preheat the oven to 350 degrees Fahrenheit and spray a 9X13 baking pan with non-stick cooking spray.

Step 2. Get out a large mixing bowl. Stir together the cake mix, cream cheese, eggs, and vegetable oil together in a large bowl.

Step 3. You will need a separate small bowl. Stir together the brown sugar and ground cinnamon.

Step 4. Spread half of the cake batter in the prepared baking dish.

Step 5. Next, sprinkle the brown sugar and cinnamon mixture on top of the cake batter.

Step 6. Then pour the remaining cake batter on top.

Step 7. The cake needs to bake for 30-35 minutes or until a toothpick inserted into the cake comes out clean.

Step 8. While the cake cools, stir together the icing ingredients in a bowl. Once combined, add a few drops of the food coloring until the icing is pink.

Step 9. Finally, pour the icing over the warm cake.  Cool the cake completely and then it’s ready to serve and enjoy!

Storage

Cover and refrigerate the leftovers. It will last up to 3-4 days in the refrigerator. You can also place inside an airtight container.

Pro Tips

  • Room temperature ingredients. The cream cheese is easier to combine if softened.
  • Freeze leftovers. Extend the life of the cake by freezing it. Wrap in plastic wrap and place inside a freezer bag up to 3 months.
  • Allow to cool. The cake needs to cool before you top with icing.
  • Use an offset spatula. If you have trouble spreading the batter on each layer, use an offset spatula.
  • Don’t mix together the layers. Make sure to add each layer to the top and don’t combine with the other. You want to see the cinnamon sugar swirl once it’s baked.
  • Garnish with fresh strawberries. It’s totally optional but you can top the cake with fresh strawberries when serving if desired.
