Why This Recipe Works

It’s a great way to use ripe bananas and the sweetness makes the bread even better. The combination of blueberries is the perfect surprise and taste amazing. This bread is very easy to make and freezer friendly!

Ingredients

Ingredients for recipe -flour, baking soda, butter, blueberries, eggs, vanilla.
  • All Purpose Flour. Some of the flour is reserved to coat the blueberries. This is an important step because it prevents them from sinking to the bottom of the bread.

Step by Step Instructions

  • Step 1. Preheat the oven to 350 degrees Fahrenheit. Spray a 9X5 inch loaf pan with a non-stick cooking spray.
  • Step 2. In a large mixing bowl, stir together the flour, baking soda, baking powder and salt.  Set aside the flour mixture.

Step 3. Get out a separate large bowl. Use a stand mixer or hand mixer to beat together the butter and sugar until light and fluffy.

Step 4. Next, add the eggs, one at a time, until combined. Then mix in the vanilla extract.  Mash up the ripe bananas and add them to the mixture.

Step 5. Slowly add the dry ingredients into the wet ingredients until just combined.  Be careful not to over mix the batter as you whisk.

Step 6. Use a small bowl and toss the blueberries in 1 tablespoon of flour.

Step 7. Gently stir the blueberries into the batter.

Step 8. Next, pour the batter in the prepared loaf pan.  Bake for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean as a cake tester.  It should be golden brown.

Step 9. Let the bread cool in the pan for 10 minutes. Then place the bread on a wire rack to cool completely.

Step 10. Allow the bread to cool and then slice. It’s delicious served with honey and butter.

Storage

Store any leftover bread in an airtight container or bag at room temperature up to 4-5 days.

Can you freeze the bread?

This recipe is very freezer friendly. Make sure the bread is cool. Then wrap in plastic wrap or aluminum foil. Then place inside a freezer bag.

You can freeze in slices or the entire loaf. Freeze up to 2 months. Allow to thaw at room temperature. You can also microwave for a few seconds.

Expert Tips

  • Don’t skip coating the blueberries in flour. This helps to prevent the berries from sinking to the bottom of the banana mixture.
  • Try making blueberry muffins. This recipe is easy to make into muffins. You will need to adjust the baking time.
  • Ripe Bananas work best. They are easier to mash and provide extra sweetness. It’s a great recipe to use those ugly brown bananas.
  • Frozen Blueberries may be used. Just make sure to drain them before combining with the mashed bananas.
  • Gently fold the blueberries into the batter so you do not mash them.
