  • Eggs. Large eggs at room temperature.
  • Vanilla Extract. Always use pure vanilla extract for best results.
  • Fresh Strawberries. Chopped into small pieces.

Variations and Additions

  • Nuts. Add walnuts or pecans to the batter before baking.
  • Fruit. Swap the strawberries with raspberries or blueberries.
  • Chocolate. Add milk chocolate or dark chocolate chips in the batter or on top of the bread. You can also use white chocolate chips.
  • Greek Yogurt. Switch out the Greek Yogurt for sour cream.
  • Almond Extract. You can use this instead of vanilla extract.

Step By Step Instructions

  • Step 1. Preheat the oven to 350 degrees Fahrenheit. Spray a 9X5 inch loaf pan with cooking spray.
  • Step 2. In a large bowl, stir together the flour, baking soda, baking powder and salt.  Set aside.

Step 3. You will need a separate bowl. Use a stand mixer or handheld mixer and beat together the butter and sugar until light and fluffy.

Step 4. Next, add the sour cream and eggs (one at a time) until combined. Then mix in the vanilla extract.

Step 5. Mash up the ripe bananas and add them to the mixture. Slowly add the dry ingredients into the wet ingredients.  Be careful not to over mix. Then toss the strawberries in flour and gently stir the strawberries into the batter.

Step 6. Finally, pour the batter in the prepared loaf pan.  Then bake for 50-60 minutes until a toothpick inserted into the center comes out clean.

Step 7. Let the bread cool in the pan for 10 minutes and then turn the bread out onto a wire rack to cool completely.

Store any leftover bread in an airtight container or bag at room temperature. It will last up to 4-5 days.

Pro Tips

  • Cover the bread if needed. Watch the bread closely toward the end of the cook time. If the top of the bread is browning too quickly, tent the top of the pan with foil to prevent it from getting too browned.
  • Don’t overmix the batter. Stir the ingredients together until just combined. Don’t overmix or the texture will not be soft and fluffy.
  • Ripe bananas. Don’t use green bananas. They need to be ripe for the best bread. It will make the bread moist and sweet.
  • Coat the fruit in flour. This will prevent the fruit from settling to the bottom of the loaf.
  • Make muffins. Use the batter to make muffins. They will turn out so tasty but make sure to adjust the cooking time.

I do not recommend using frozen berries. The texture is different, and they are soggier than fresh strawberries.

Can I use gluten-free flour?

Yes, you can swap out the flour with gluten free flour. Use a 1:1 ratio.

How can I ripen bananas quickly?

Place whole bananas in the peeling on a baking sheet. Bake at 350 for 30 minutes. The skin should be completely black. Allow to cool and then use as normal.

  • 2 cups All Purpose Flour plus 3 Tablespoons for coating the Strawberries
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Granulated Sugar
  • 1/3 cup Butter softened
  • 1/4 cup Sour Cream
  • 3 Ripe Bananas mashed
  • 2 Large Eggs room temperature
  • 2 teaspoons Vanilla Extract
  • 1 1/2 cups Fresh Strawberries chopped
