Why are they called Scotcheroos?
The name originates from the butterscotch in the recipe and references all of the yummy butterscotch flavor. The recipe has been around for a long time and originally was found in a box of Rice Krispies cereal.

Ingredients

- Rice Krispies cereal
- peanut butter
- granulated sugar
- light corn syrup
- semi-sweet chocolate chips
- butterscotch chips
Variations
- Sea Salt. Sprinkle sea salt on top of the chocolate before it sets.
- Cereal. You can substitute special k cereal for the rice Krispie treats. I prefer the original recipe but have used special k when we were out of rice krispies and it was still yummy.
How to make Scotcheroos:

Step 1. Prepare the baking dish with cooking spray or line with aluminum foil. Then pour crispy rice cereal into a large bowl.

Step 2. Next, put the peanut butter, sugar, & corn syrup in a medium pot and bring to a boil. Make sure to stir the corn syrup mixture constantly.

Step 3. Now, pour the hot mixture over the rice krispies and mix it really well.

Step 4. Finally, pour the mixture into the 9×13 pan you prepared earlier. The last step is to melt the milk chocolate chips & butterscotch chips together in a small pot over medium heat. Melt this on low heat and stir the chocolate constantly.

Step 5. Spread the melted chocolate over the mixture.

Step 6. Allow to the chocolate topping to set before cutting the bars.
Tips for chocolate peanut butter Scotcheroos:
- Make sure to let them come to room temperature before serving if storing in the fridge. Otherwise, they will be hard.
- In a hurry? You can place the bars in the fridge or freezer to help hurry along the process of the chocolate setting.
- Creamy peanut butter works best. Just regular any brand creamy peanut butter!
- Feeling festive? Add sprinkles to the top of the bars to match party theme, holidays and more.
FAQ’s
Follow the cooking time precisely. Overcooking the mixture can result in very hard scotcheroos.
Remove the sugar mixture from the heat right away. This is really important. Don’t leave it sitting on the stove.
Also. pressing the cereal mixture into the baking dish too firmly, can result in hard scotcheroos. Just gently press the mixture into the pan.
After cutting into bars, place inside an airtight container. They can be stored at room temperature and normally last about a week. However, my family eats them pretty much so they never last that long around here.
If it is warm and the chocolate starts to melt, you can store in the fridge. However, make sure to let them come to room temperature before you serve them or they will be hard.
Cut them into squares and allow them to cool completely. Place them in a freezer container with parchment paper in between each layer.
They will keep up to 3 to 4 months.

Ingredients
- 6 cups Rice Krispies cereal
- 1 cup peanut butter
- 1 cup sugar
- 1 cup light corn syrup
- 1 cups chocolate chips
- 1 cups butterscotch chips
Instructions
- Grease a 9×13 pan. Set aside.
- Pour Rice Krispies into a large bowl
- Bring peanut butter, sugar, & corn syrup to a boil in a medium pot. Be sure to stir constantly.
- Pour hot mixture over rice krispies & mix well.
- Pour into greased 9×13 pan and gently press down with a spatula.
- Melt chocolate chips & butterscotch chips together in a small pot, stirring constantly on low heat.
- Pour the melted chocolate and butterscotch chips over the pressed Rice Krispies and let them set before cutting and serving.
