Why We Love These Cookies
They are inexpensive and so easy to make. You can easily make a batch without much effort or double it for a crowd. They taste great and everyone will love them.

Ingredients
- Cake mix. You can use any flavor of cake mix.
- Cool Whip. Store brand is also fine to use. Just make sure the whipped topping is thawed.
- Egg. Large egg, room temperature.
- Powdered Sugar. Sift the powdered sugar to remove any lumps.

Step By Step Instructions
- Step 1. Go ahead and preheat the oven to 350 degrees. Then spray the cookie sheet with non-stick cooking spray.
Step 1. Use a large mixing bowl and combine cake mix, cool whip and egg. The batter will be very fluffy, but this is normal. Just keep mixing until well combined. I like to combine by hand instead of using a hand mixer or stand mixer.
Step 2. Form the cookie dough balls by using a small cookie scoop or two spoons. Then drop the rounded cookie dough into a small bowl of powdered sugar. Roll the dough ball until completely covered and place the cookies on the prepared baking sheet.
Step 3. Next, bake the cookies for 8 to 10 minutes until just slightly browned on the edges. You want the cookies to be set but not completely browned. It’s important to watch them closely.
Step 4. The cookies need to sit on the baking sheet for 5-10 minutes. Then move them to a wire rack to cool completely.
Storage
Store any leftover cookies in an airtight container for up to 1 week. You can keep a slice of bread in the container with the cookies to keep them soft.
If you want to freeze the cookies, place inside a freezer bag. You can freeze up to 2 months. Place parchment paper in between the layers of cookies so they don’t stick.
Allow to thaw in the refrigerator when ready to serve.
Pro Tips
- Prepare the pan. The cookies are sticky so it’s best to line the pan with a silicone baking mat.
- Allow to cool. The cookies need to cool completely on a cooling rack. If moved to quickly, they will fall apart.
- Use a cookie scoop. It’s easiest to form the cookies using a cookie scoop instead of tablespoonfuls. The cookie scoop makes each cookie the same size.
- Give the cookie dough balls space. Place them about 2 inches apart on the baking sheet. They need room to spread.

- Cake Mix. Try a different flavor cake mix including chocolate cake mix, funfetti cake mix, lemon cake mix, red velvet cake mix and strawberry cake mix.
