When I was a kid, we always topped our ice cream with Magic Shell. It is basically chocolate syrup that creates a hardened shell on ice cream but still soft enough to bite into.

I learned a few years ago that it’s actually easy to make. This Magic Shell recipe only require 2 Ingredients. The ingredients are as simple as a bag of chocolate chips and some coconut oil. Toppings are so much fun, and we also love to make Homemade Caramel Sauce Recipe.

What is Magic Shell?

Magic Shell makes your ice cream ten times better. It is fun to see it harden when it is poured over ice cream. The chocolate syrup immediately hardens when topped over ice cream.

You can easily find Magic Shell at the grocery store located with the other syrups but with only 2 ingredients, we like making it at home. Place the ingredients in a bowl and heat in the microwave until creamy.

It can easily be stored in the pantry then reheated to be used multiple times.

Ingredients needed - chocolate chips and coconut oil
  • Semi-sweet Chocolate Chips. Semi-Sweet helps to cut down on the sweetness. You can also mix in peanut butter chips to make Peanut Butter Magic Shell.
  • Refined Coconut Oil. This is the trick to making it harden.

Variations and Substitutions

  • Coconut Oil – We used refined coconut oil which has a plain flavor. You can also use Virgin Coconut Oil but your magic shell will have a coconut flavor.
  • Try Different Chocolate – If you prefer you can use different types of chocolate. Try Milk Chocolate or Dark Chocolate for a fun twist on this Magic Shell Recipe.
  • Use Magic Shell for other things – Magic Shell just isn’t for Ice Cream. Drizzle magic shell works over fresh fruit or over yogurt.
  • Make Chocolate Covered Bananas – Dip a frozen banana in the Magic Shell for an amazing treats.
  • Chocolate Fudge Bars – If you have fudge bars, dip them in the chocolate then in chopped pecans.
  • Make a Frozen Yogurt Parfait – I love parfaits and adding chocolate shell to it really makes it so fun to eat. I top with frozen strawberries and granola, and it is an amazing healthier treat.

How to Make Magic Shell

Step 1. Use a microwave-safe bowl and stir together the chocolate chips and coconut oil. Heat in 30 second intervals in the microwave. Make sure to stir between each interval until the chocolate is melted and smooth.

Step 2. Allow the chocolate to cool uncovered until the chocolate is barely warm. This will take about 15 to 20 minutes.  You will need to stir the mixture every 5 minutes so that the chocolate cools evenly. Then pour the chocolate sauce over ice cream by the spoonful and let sit for 30 seconds to harden.

What makes Magic Shell Harden?

The coconut oil is what makes the Magic Shell Harden. The combination of the chocolate and coconut oil hardens into a shell when poured over cold ice cream.

The chocolate shell gets a dull appearance but it is fun and satisfying when it works its magic. Coconut oil has a high amount of fat. It is solid at room temperature but when heated it melts.

When you melt the chocolate and coconut oil together it becomes a melt smooth, gooey consistency that is perfect for ice cream. But when it becomes in contact with ice cream, it makes the coconut oil harden because of the cool contact.

Can I make Magic Shell with a Double Boiler?

Yes, you can melt the chocolate and coconut oil together in a double boiler. This is a great alternative if you don’t have a microwave.

Storage

You can store any leftovers in an airtight container at room temperature for up to 1 month.  I like to use a mason jar. If it re-solidifies, reheat it in the microwave in 15-20 intervals until it is a liquid again.

Store bought Magic Shell can be stored at room temperature as well.

Expert Tips

  • Use a dry bowl – When adding the chocolate chips and the coconut oil to the bowl, make sure there is no water in the bowl. Water can cause the chocolate to not to melt.
  • Melt ingredients in intervals – To help the chocolate melt evenly, heat and intervals stirring until completed melted. This also helps the chocolate from burning.
  • Cool before using – Before pouring chocolate onto your ice cream, make sure you let it cool. If you pour the chocolate mixture on the ice cream to soon it will melt your ice cream. It will take about 20 minutes to cool.

Instructions

  • Stir together the chocolate chips and coconut oil in a microwave safe bowl.
  • Heat in 30 second intervals in the microwave, stirring well after each interval until the chocolate is melted and smooth.
  • Allow the chocolate to cool uncovered until the chocolate is barely warm (approximately 15-20 minutes).  Stir every 5 minutes so that the chocolate cools evenly.
  • Then pour over ice cream, top with your favorite ice cream toppings.  Let sit for 30 seconds to harden and then it’s ready to enjoy!
