Watermelon Sorbet is absolutely delicious and so incredibly simple. The watermelon is the star of the show, and the flavor is prominent in each bite. It is light and refreshing on a hot day but perfect any time of year. I also love to make Raspberry Sorbet.

You need very little sweetener thanks to the natural sweetness of the fruit. Each scoop is so amazing, and my kids love this. I have been making it for a few years now and it’s a hit while being dairy-free, gluten-free, vegan and so healthy.

It taste great with simple ingredients. The entire recipe is so easy, and you will love the transformation of frozen watermelon chunks into sorbet. With only 4 ingredients, anyone can make this without any special supplies.

Whenever we are craving a frozen treat or ice cream, I make this healthy alternative instead. The flavor from the fresh watermelon is so delicious.

Ingredients

  • Watermelon. I recommend seedless watermelon.
  • Sugar. Plain granulated sugar.
  • Lime Juice. I highly recommend fresh lime juice. It enhances the flavor and tastes better than bottled.

Variations

  • Lemon. You can use lemon juice instead of lime juice.
  • Mint or Basil. Add mint or basil leaves to the simple syrup. Steep for an hour and discard before adding to the fruit.
  • Salt. If you like salt with your watermelon, you can add a dash of salt to the recipe.

Step By Step Instructions

Step 1. First, slice the watermelon into small cubes.

Step 2. Next, place the fruit in a shallow container or baking sheet lined with parchment paper. Arrange the fruit in single layer so it freezes quicker. Freeze for at least 4 hours but overnight is best.

Step 3. After you have frozen the watermelon, make a simple syrup. Combine the sugar and water in a small saucepan. Bring to a boil over medium heat until the sugar is dissolved.

Step 4. Next, add the lime juice to the saucepan. Stir to combine.

Step 5. Add the frozen watermelon cubes into a food processor or blender.

Step 6. Pour the simple syrup into the melon.

Step 7. Finally, blend until the mixture is the consistency of puree. Make sure to scrape down the sides to ensure the mixture is well combined.

Step 8. You can serve right away in a bowl or chill in the freezer if you prefer a firmer texture.

Storage

Store the sorbet in a freezer container up to 2 weeks. Longer storage will create ice crystals on top and the texture will change.

Thaw a few minutes to make scooping easier.

Pro Tips

  • Adjust the simple syrup. If your watermelon is in season and very sweet, the simple syrup may not be needed. You can also adjust the amount of simple syrup to reduce the sweetness if desired. The sweetness of the watermelon will vary.
  • Don’t add sugar without using a simple syrup. I do not recommend adding sugar to the sorbet without using a simple syrup or the texture will be grainy.
  • Creamy Texture. You can add a little bit of coconut milk, heavy cream or almond milk when blending for creaminess.
  • Try other fruits. You can use this as a base recipe and make strawberry, blueberry, cantaloupe and other sorbet options.
  • Unrefined sweetener. Substitute honey in the recipe. Combine in the simple syrup as you would with the sugar. Maple syrup is another option.
  • Thin the mixture. If the watermelon is difficult to blend, add a few tablespoons water and blend.

  • 5 1/2 cups cubed seedless watermelon
  • 1/4 cup water
  • 1/4 cup sugar
