Ingredients

- Popped Popcorn. You will need about 3 bags.
- Peanut butter. Creamy peanut butter is recommended for this recipe.
- Vanilla Extract. Always use pure vanilla extract.

Variations
- Chocolate Chips. Toss in a handful of chocolate chips. Chocolate Peanut Butter Popcorn is delicious.
Some ideas include: milk chocolate, dark chocolate or white chocolate. I think a mixture would look pretty and taste great too. - Melted Chocolate. Drizzle chocolate on top of the popcorn for even more decadent flavor. You can use milk chocolate or white chocolate. Another idea is to combine both!
- Nuts. You can add nuts for a bit of crunch. Peanuts are yummy but you can use any type you prefer.
- Mini Marshmallows. Add mini marshmallows for a fun popcorn mix.
How to Make Peanut Butter Popcorn
- Step 1 – Get out a large bowl. Place the popcorn in a large bowl and then set aside.

Step 2. Heat the mixture. Heat the light corn syrup and sugar in a large saucepan over medium heat. Make sure that you are stirring constantly so that the sugar does not burn. Then bring the mixture to a low boil for 2 minutes.

Step 3. Then remove from heat and stir in the peanut butter and the vanilla. Once combined, pour the peanut butter mixture over the popcorn.

Step 4. Then pour the popcorn on a baking sheet lined with parchment paper. Allow to cool for about 10-20 minutes.

Step 5. Once set, serve in a bowl and enjoy.

Storage
Store the leftovers in an airtight container at room temperature for up to 1 week. However, your family will eat this so fast so I doubt it lasts that long.
I like to give this popcorn as gifts. Just package in a cellophane bag and tie with a pretty ribbon. Everyone will be so excited to receive this yummy treat.
Pro Tips
- Do not boil the corn syrup mixture for longer than 2 minutes or it will harden and become difficult to work with. It is important to watch it closely as it cooks.
- Remove any popcorn kernels after popping. You do not want this in your mixture.
- We used microwave popcorn but you can use store bought that is already popped.
- Allow the popcorn to cool completely before storing. It should no longer be sticky.
- It is helpful to line the baking sheet with parchment paper. This mixture is very sticky until it sets. Clean up will be much easier if you you line the pan.
- Creamy peanut butter is best in this recipe. The texture will be smoother and creamier. I do not recommend natural peanut butter.

- 1 cup Granulated Sugar
- 1 cup Light Corn Syrup
- 1 cup Peanut butter
- 1 tsp Vanilla Extract

- Heat the light corn syrup and sugar in a large saucepan over medium high heat. Stir the mixture together constantly so that the sugar does not burn and bring the mixture to a low boil. Then allow the mixture to boil for approximately 2 minutes.
- Then remove from heat and stir in the peanut butter and the vanilla extract. Once fully combined, drizzle the peanut butter mixture over the popcorn and gently toss the popcorn to coat it with the peanut butter sauce.
- Then pour the popcorn on a baking sheet lined with parchment paper or wax paper and allow for it to cool (approximately 10-20 minutes).
- Then the popcorn is ready to serve and enjoy!
