Ingredients

Ingredients for Peanut butter popcorn - popcorn, peanut butter, vanilla, corn syrup.
  • Popped Popcorn: Use about three bags of plain or lightly salted popcorn. Be sure to remove any unpopped kernels before mixing to avoid any unpleasant bites.
  • Peanut Butter: Creamy peanut butter works best for an even coating and smooth texture. It blends easily and gives the popcorn a rich, nutty flavor. I like Skippy or Jif.
  • Vanilla Extract: A splash of pure vanilla extract adds warmth and depth, enhancing the overall sweetness of the mixture.

Variations

  • Chocolate Chips: Toss in a handful of chocolate chips for a rich, sweet twist. Try milk, dark, or white chocolate or a combination for both flavor and visual appeal.
  • Melted Chocolate Drizzle: Take it up a notch by drizzling melted chocolate over the finished popcorn. Use milk, dark, or white chocolate or swirl two together for a beautiful, decadent finish.
  • Add Nuts: Mix in chopped peanuts or your favorite nuts for extra crunch and nutty flavor. Almonds, cashews, or pecans all work great.
  • Mini Marshmallows: Stir in mini marshmallows for a soft, chewy contrast that kids especially love.
  • Pretzels: Break up small pretzel twists and mix them in for a salty, crunchy variation that pairs perfectly with the peanut butter.
  • Candy Mix-Ins: Add M&M’s, Reese’s Pieces, or chopped peanut butter cups for a fun and colorful twist. It’s great for holidays or themed treats.

Storage

Store any leftovers in an airtight container at room temperature for up to one week. That said, it’s so tasty, chances are it’ll disappear long before then!

Pro Tips

  • Don’t Overcook the Syrup: Boil the corn syrup mixture for no longer than 2 minutes. If it cooks too long, it can become hard and difficult to mix into the popcorn. Keep a close eye on the timing.
  • Remove Unpopped Kernels: After popping the popcorn, sift through and discard any unpopped kernels to avoid unpleasant surprises when eating.
  • Use Your Preferred Popcorn: Microwave popcorn works great, but pre-popped store-bought popcorn is also a convenient option. Just avoid varieties that are overly buttery or flavored.
  • Cool Before Storing: Let the coated popcorn cool completely before placing it in a container. It should be dry to the touch and no longer sticky.
  • Line Your Pan: Use parchment paper to line your baking sheet before spreading out the popcorn. This makes cleanup much easier and prevents sticking while the coating sets.
  • Stick with Creamy Peanut Butter: For the smoothest texture and best coating, use creamy peanut butter. Natural peanut butter tends to separate and can affect the consistency of the mixture.

Do not boil the corn syrup mixture for longer than 2 minutes as it will be hardened and difficult to work with so watch it closely as it cooks.
