I have tried coconut flour bread and coconut flour pancakes and loved them both. So, I knew this mug cake with be a hit too on the keto diet.
Ingredients

- Butter. It’s best to use real butter.
- Coconut Flour. Keto friendly substitute to use instead of traditional flour.
- Swerve Granular Sweetener. This is easy to cook with.
- Egg. Use a large egg.
- Vanilla Extract. Pure vanilla is best.
- Swerve Confectioner’s Sugar. This is optional but so delicious for the topping.

Substitutions And Additions
- For the Sweetener – I used Swerve erythritol sweetener for this recipe, but any brand will work. You can also use Monk Fruit sweetener or if you’re not following a low sugar diet, you can use real sugar as well.
- For the Butter – You can also use coconut oil instead. I find that butter makes the mug cake more moist and soft but the oil will work as well.
- Vanilla Extract – This is needed to give this mug cake a slight vanilla flavor that accents the coconut flour well. Make sure to use a no sugar added option.
- Cocoa Powder. Add cocoa powder to make a chocolate coconut mug cake with lots of chocolate flavor.
- Cream Cheese. Cream cheese is also delicious for a creamy texture and another decadent dessert option.
- Chocolate. Add sugar free chocolate chips for a dessert that tastes like a chocolate chip cookie or add dark chocolate. Yum!
- Topping. Top with Keto Whipped Cream, sugar free maple syrup or low net carbs ice cream.

There is an egg used to make mug cakes, but the egg and mixture does cook in the microwave making it perfectly safe to eat.

Generally, when I make this recipe, I enjoy it right away while the cake is warm. However, you can keep this mug cake covered at room temperature for up to 1 day.
