Why This Recipe Works

Coconut flour is amazing to use and tastes really great while being keto friendly. This is a great ingredient to cook with instead of regular flour while staying on track. I love keto coconut flour recipes.

I have tried coconut flour bread and coconut flour pancakes and loved them both. So, I knew this mug cake with be a hit too on the keto diet.

Ingredients

Ingredients for keto mug cake - butter, coconut flour, swerve, baking powder, egg, vanilla.
  • Butter. It’s best to use real butter.
  • Coconut Flour. Keto friendly substitute to use instead of traditional flour.
  • Swerve Granular Sweetener. This is easy to cook with.
  • Egg. Use a large egg.
  • Vanilla Extract. Pure vanilla is best.
  • Swerve Confectioner’s Sugar. This is optional but so delicious for the topping.

Substitutions and Additions

  • For the Sweetener – I used Swerve erythritol sweetener for this recipe but any brand will work. You can also use Monk Fruit sweetener or if you’re not following a low sugar diet, you can use real sugar as well. 
  • For the Butter – You can also use coconut oil instead. I find that butter makes the mug cake more moist and soft but the oil will work as well. 
  • Vanilla Extract – This is needed to give this mug cake a slight vanilla flavor that accents the coconut flour well. Make sure to use a no sugar added option.
  • Cocoa Powder. Add cocoa powder to make a chocolate coconut mug cake with lots of chocolate flavor.
  • Cream Cheese. Cream cheese is also delicious for a creamy texture and another decadent dessert option.
  • Chocolate. Add sugar free chocolate chips for a dessert that tastes like a chocolate chip cookie or add dark chocolate. Yum!
  • Topping. Top with Keto Whipped Cream, sugar free maple syrup or low net carbs ice cream.
  • Berries. Add berries or mix in berries before cooking for something different. This turns out like a cobbler if you bake them inside the mixture.
  • Peanut Butter. Add a dollop of peanut butter to the low carb recipe.

How to Make Coconut Flour Mug Cake

Step 1. Put all of the ingredients except the confectioner’s sugar in a mug.

Step 2. Next, stir with a fork until all the ingredients are thoroughly combined and without lumps.

Step 3. Finally, microwave on high for 90 seconds.

Step 4. Top the keto coconut flour cake with the confectioner’s sugar and enjoy. You can eat right out of the mug.

Frequently Asked Questions

How long do you cook this mug cake? 

The cook time for this recipe will vary slightly depending on your microwave. Check your microwave power and adjust the cook time based on that power setting. 

Most microwaves cook between 600W, 800W or 1000 W. 

Here are a few ways to adjust the cook time based on your microwave. The power setting of your microwave is usually posted on a sticker inside the microwave. 

600W – This is the lowest power of microwave, so you will need to add 20-30 seconds to the cook time of the mug cake to make sure that it gets cooked all the way through. 

800W – This one has slightly more power, so just a little more cook time would need to be added to this recipe. I would add 10-15 seconds to the cook time.

1000W – This is the highest power types of microwaves and the most common in the US. This is the one that we used when testing this recipe and we found that 60 seconds was the perfect amount of time. 



Is it safe to eat a mug cake?

If you have never tried a mug cake before, you might be a bit nervous to eat a cake that was made in a microwave.

There is an egg used to make mug cakes, but the egg and mixture does cook in the microwave making it perfectly safe to eat.

Just make sure that the cake is cooked all the way through and you’re fine to enjoy a cake made in your microwave.

Can you reheat a mug cake?

Generally, when I make this recipe, I enjoy it right away while the cake is warm. However, you can keep this mug cake covered at room temperature for up to 1 day.

To reheat it, place it in the microwave and heat it for 15-20 seconds and then it’s ready to enjoy.

Pro Tips

  • We used a 14 oz mug for this recipe and it worked perfectly.  We had plenty of room at the top so I think a 12 oz mug would have worked great too. Just make sure the mug that you use is microwave safe. 
  • Try different types of mugs or containers to find the best one for your microwave.
  • Make sure that the cake batter is thoroughly combined before microwaving the mug cake.
  • It’s better to under cook the mug cake than to over cook the mug cake because you can always cook it more until done. So if your microwave cooks hotter, reduce the cook time slightly.
  • Top with different types of toppings to change up the flavor of this mug cake.
  • Do not over fill your mug. The cake will expand while it’s cooking and will explode if the mug is over filled.
