Ingredients

Ingredients needed - butter, almond flour, sweetener, coconut flour, baking powder, egg, vanilla
  • Butter, Melted
  • Almond Flour
  • Low Carb Sweetener (We used Swerve)
  • Coconut Flour
  • Baking Powder

Substitutions and Variations

  • For the Flour – I have tested this recipe many times and have found that the combination of the almond flour and coconut flour works best. You can use all almond flour if you do not have coconut flour on hand.
  • For the Sweetener – I used Swerve erythritol sweetener for this recipe but any brand will work. You can also use Monk Fruit sweetener or if you’re not following a low sugar diet, you can use real sugar as well.
  • For the Butter – You can also use coconut oil instead. I find that butter makes the mug cake more moist and soft but the oil will work as well.
  • Vanilla Extract – This is needed to give this mug cake that vanilla flavor. Make sure to use a no sugar added option.
  • Add chocolate chips for a dessert that tastes like a chocolate chip cookie. You can also add in shaved chocolate. We like to choose the dark chocolate bar to stay within our keto diet.
  • Peanut butter fans will love peanut butter chips in this dessert.
  • You can add cocoa powder for a chocolate flavor.
  • Top with whipped cream or low net carb ice cream. There are so many different low carb ice cream to choose from. Strawberry or chocolate is my favorite.
  • Add berries or mix in berries before cooking for something different. This turns out like a cobbler if you bake them inside the mixture. We recommend strawberries or blueberries as these are low carb fruits.
  • You can add cream cheese to this mixture for a totally different taste and texture. It is so amazing and makes it really creamy.
  • If you prefer to have no eggs, you can add in almond milk instead. You can actually use any non dairy option to mix into the cake.
  • Protein powder is a great addition to this cake. Feel free to add some of your protein powder to you mug cake for flavor and to up your protein.

How to make the Keto Mug Cake

Step 2. Then stir with a fork until all the ingredients are thoroughly combined. Microwave for 60 seconds.

We usually make this Keto Mug Cake when the craving hits, but if you have leftovers store in the refrigerator. Make sure to cover and it will last about 3 days.

What is a Mug Cake?

A mug cake is simple a cake that is made in a microwave safe mug. The ingredients are combined in the mug and then cooked in the microwave for an individual serving cake.

We cooked our cake in the microwave, but you place the mug cake in the oven as well.

How long do you cook a mug cake?

The cook time for this recipe will vary slightly depending on your microwave. Check your microwave power and adjust the cook time based on that power setting.

Most microwaves cook between 600W, 800W or 1000 W.
Here are a few ways to adjust the cook time based on your microwave. The power setting of your microwave is usually posted on a sticker inside the microwave.

600W – This is the lowest power of microwave, so you will need to add 20-30 seconds to the cook time of the mug cake to make sure that it gets cooked all the way through.
800W – This one has slightly more power, so just a little more cook time would need to be added to this recipe. I would add 10-15 seconds to the cook time.
1000W – This is the highest power types of microwaves and the most common in the US. This is the one that we used when testing this recipe and we found that 60 seconds was the perfect amount of time.

When making your mug cake, I recommend using the lower cook time provided in these ranges. Then check your cake and you can always cook in 10 more second intervals until the cake is done.
Also, keep in mind that your cake will continue to cook while it sits so it’s best to under cook the cake slightly so that it does not dry out while it sits.

Can you reheat a mug cake?

Generally, when I make this recipe, I enjoy it right away while the cake is warm. However, you can keep this mug cake covered at room temperature for up to 1 day.

To reheat it, place it in the microwave and heat it for 15-20 seconds and then it’s ready to enjoy.

Is it safe to eat a mug cake?

Yes, it is safe to eat a mug cake. Make sure to cook it long enough since it has flour and egg in it.

What size mug should I use?

We used a microwave-safe mug that is about 6-8 oz in size.

Why is my cake rubbery?

If your mug cake turns out rubbery, it is because you have overcooked it or used to much baking powder. Just a small amount of baking powder is needed.

How many carbs are in a keto mug cake?

Depending on your ingredients, but they can range from 2 grams to 4 grams of carbs.

Pro Tips

  • We used a 14 oz mug for this recipe and it worked perfectly.  We had plenty of room at the top so I think a 12 oz mug would have worked great too. Just make sure the mug that you use is microwave safe. 
  • Try different types of mugs or containers to find the best one for your microwave.
  • Make sure that the cake batter is thoroughly combined before microwaving the mug cake.
  • It’s better to under cook the mug cake than to over cook the mug cake because you can always cook it more until done. So if your microwave cooks hotter, reduce the cook time slightly.
  • Top with different types of toppings to change up the flavor of this mug cake. You can even mix in sugar free chocolate chips into the cake batter for more flavor.
  • Do not over fill your mug. The cake will expand while it’s cooking and will explode if the mug is over filled.
  • Carefully remove the mug from the microwave. If you mug is microwave safe, the handle should not be hot. But you may need to remove with pot holders.
