This is a chocolate fudge with salted peanuts and mini marshmallows.

Ingredients

Ingredients for Rocky Road Fudge - semi sweet chocolate chips, sweetened condensed milk, vanilla, marshmallows and peanuts.
  • Semi-sweet chocolate chips. While you can certainly use milk chocolate chips or dark chocolate, I prefer semi-sweet for the perfect balance.
  • Sweetened Condensed Milk. This makes the best creamy chocolate fudge.
  • Vanilla Extract. Use pure vanilla extract in this chocolate mixture for the best results.
  • Miniature Marshmallows. The smaller size is perfect to get some in each bite.
  • Salted Peanuts. You can also use walnuts, almonds, or pecans.

How to Make Rocky Road Fudge

  • Step 1. First, you will need a baking dish and we like to use a 9×13 size. Go ahead and line the pan with foil or parchment paper and spray with cooking spray.

Step 2. Second, add sweetened condensed milk and chocolate chips in a microwave-safe bowl. You can also use a double boiler to melt the chocolate. You would melt the chocolate over medium heat.

Step 3. Then heat in the microwave in 30-second intervals. Make sure to stir after each interval until the mixture is completely melted. Add the vanilla extract and stir.

Step 4. Add the nuts and marshmallows.

Step 5. Then gently fold together until well combined.

Step 6. Once this is combined together, pour the fudge mixture into the prepared pan.  Place in the fridge until it is firm.

Step 7. Once set, lift the foil out of the pan and cut into squares.

  • High quality chocolate. Use high quality chocolate for the best results. You can taste the difference!
  • Serve fudge at room temperature. It is best to take the fudge out of the fridge for 15 minutes before serving.
  • Don’t overcook. If you overheat the mixture, it will become grainy.
  • Get perfect slices. Spray your knife with cooking spray to easily cut the fudge.

Can you use evaporated milk instead of sweetened condensed milk?

Because sweetened condensed milk and evaporated milk are very similar, you can substitute evaporated milk for the sweetened condensed milk. You will not get the same sweet, caramelized flavor with evaporated milk, but the consistency will be similar.

How to Store Fudge Leftovers?

Store any fudge leftovers in an airtight container in the refrigerator for up to 1 week.  

Can you Freeze this?

The fudge can also be frozen up to a month. Just place inside an airtight freezer container. I also like to put wax paper in between the fudge slices.

This helps to prevent sticking. If you do a lot of baking for the holidays, this is something you can definitely make ahead of time.

Instructions

  • Line a 9X13 baking pan with foil or parchment paper and then spray with a non stick cooking spray.
  • Place the condensed milk and chocolate in a microwave safe bowl.
  • Heat in 30 second intervals in the microwave, stirring after each interval until the mixture is melted and well combined.  Mine took approximately 90 seconds.
  • Mix in the vanilla extract. This stir in the peanuts and miniature marshmallows.
  • Pour the mixture into the prepared pan.  Refrigerate until firm.
  • Then carefully lift the foil out of the pan and cut into pieces
