  • Overripe Bananas. This is a must! You don’t want to use green bananas.

Substitutions and Additions

  • Chocolate Chips. Stir ½ cup into the batter for a yummy chocolate flavor. You can use milk chocolate chips, semi sweet or dark chocolate. Another option is white chocolate chips.
  • Nuts. Fold in ⅓ cup chopped walnuts or pecans to the recipe for a delicious combination.
  • Fruit. Dried cranberries, raisins and cherries taste great in this sweet bread recipe. Toss in a handful of your favorite into the batter before baking.
  • Oil. Substitute oil for the butter in the recipe if desired. The butter gives it a richer flavor but oil can be used.
  • Flour. Try using whole wheat flour or doing half and half in the recipe.

How to make banana bread in an air fryer

  • Step 1. Preheat the oven and prepare the pans. Preheat an air fryer to 330 degrees Fahrenheit and grease three mini loaf baking pans.

Step 2. Next, peel and mash the ripe bananas with a fork or potato masher in a medium bowl. It is ok if there are still some small chunks left. Stir in melted butter, egg, sugar, vanilla, baking soda, and salt. Stir well using a large mixing bowl.

Step 3. Whisk the flour and baking soda together until the dry ingredients are combined. Pour the batter into the mini loaf pans filling them up approximately halfway full.

Step 4. Place the mini loaf pans in the air fryer basket. You may have to work in batches depending on the size of your air fryer.  Air Fryer at 330 degrees Fahrenheit for 20-25 minutes until a toothpick inserted into the center of the loaves comes out clean.

Step 5. Allow to cool on a wire rack before removing from the pans. Finally, slice and enjoy.

How to store?

Store the leftover bread in an airtight container or bag at room temperature for up to one week.  It makes a delicious breakfast that is so quick and easy. Banana bread rarely lasts long around our house.

Can you freeze banana bread?

Yes, banana bread freezes easily and still tastes delicious. We often make a double batch just to have some for the freezer.

Make sure the bread has completely cooled before freezing. Wrap the entire loaf in plastic wrap tightly. Then wrap again in aluminum foil.

You can also freeze individual slices if you prefer instead of the whole life. This is a convenient method if you want to grab slices and not have to thaw an entire loaf.

When ready to serve, allow to thaw on the counter. It can be frozen up to 3 months. You can also use the microwave if you prefer it warm.

What size air fryer was used?

We used a standard 5.8 quart air fryer. This is the basic size and what most people have at home. It held 2 of the mini loaves.

If you have a larger size, you may be able to fit all 3 mini loaves at once into the air fryer.
