Recipe Variations
- Chocolate Chips. Mix chocolate chips into the batter. The chocolate and banana combination is divine. You can also use peanut butter chips, dark chocolate or anything you have.
- Chopped Walnuts. If you like nuts, add a handful of chopped walnuts to the batter. We love walnuts but you can use pecans also.
- Frosting. For another flavor combination, try cream cheese frosting on these brownies. While we do love the brown butter frosting, sometimes it is fun to change things up.
- Swap Greek Yogurt for Sour Cream. If you want to lighten this recipe up a little bit, try using Greek Yogurt. It is a good substitute for sour cream and will still keep the moist texture everyone enjoys about these brownies.
How to make banana bread brownies
- Step 1. Preheat the oven and spray the pan. Preheat the oven to 375 degrees Fahrenheit and spray a 9X13 baking pan with a non-stick cooking spray.

Step 2. Combine the butter and sugar. In a large bowl, cream together the butter and sugar with a handheld mixer or stand mixer until combined.

Step 3. Mix in the mashed bananas and eggs. Add in the sour cream, eggs, mashed bananas and vanilla extract. Mix until combined.

Step 4. Then stir in the flour, baking soda, salt and mix until just combined. Be careful not to over mix the dry ingredients and the wet ingredients.

Step 5. Spread the banana bread batter into the baking dish. Pour the batter evenly into a baking pan. We used a 9×13 pan and it made the brownies perfect.

Step 6. Bake the Banana Brownies for 25-30 minutes until a toothpick inserted into the center comes out clean. The brownies will turn golden brown.

Step 7. Heat butter in a skillet or large saucepan. Melt the butter in a large skillet over medium heat.

Step 8. Whisk in the brown sugar. Bring the mixture to a low boil and cook until the sugar dissolves and the butter starts to brown. Then remove from heat. Whisk in the powdered sugar, vanilla extract and gradually add in the milk until the frosting is a good consistency. It should be thicker than a glaze.

Step 9. Finally, top the brownies with frosting. Pour the glaze over the warm banana brownies. Use a spatula to spread the brown butter frosting all over. Allow the brownies to set. Then cut and serve.
Storage
Refrigerate the leftovers in an airtight container for up to 4-5 days. Allow to come to room temperature before serving.
The bars can be frozen as well. Allow the brownies to cool completely and the frosting to set. You can freeze in the pan as long as it is covered tightly with plastic wrap and foil.
Another option is to freeze the bars. Wrap each bar and then place inside a freezer container or bag.
Place a layer of parchment paper in between the bars so they will not stick. When ready to serve, let the bars thaw in the refrigerator overnight.
I prefer them room temperature so allow them to sit on the counter before serving.

Can you make in advance?
This recipe can be prepared up 1 to 2 days in advance. Just make sure to cover them tightly and store in the fridge until ready to serve.
Expert Tips
- Ripe bananas are best in this recipe. The riper the bananas, the better the recipe will turn out. It will make it sweet, moist and so delicious.
- Freeze bananas for later. You can bake with them later. If you don’t have time to bake with the, freeze them to use later. They freeze easily and you will be glad you saved them.
- Don’t overmix the batter. Mix the ingredients until just combined. Don’t keep stirring the batter.
