  • Ripe Bananas. This is the recipe to use those overly ripe bananas. You don’t want to use green bananas that still need to ripen.
  • Light Brown Sugar. You can also use dark brown sugar if you prefer.

  • Nuts. This recipe is delicious with walnuts, pecans or any nut you love.
  • Chocolate. Toss in a handful of chocolate chips into the mixture.
  • Granulated Sugar. You can substitute granulated sugar for a portion of the brown sugar.
  • More Cinnamon. If you love the flavor of cinnamon, feel free to increase the amount.

Step by Step Instructions

  • Step 1. Preheat the oven to 350 degrees Fahrenheit. Spray a 9X5 loaf pan with non-stick cooking spray.

Step 2. Place the bananas in a large mixing bowl and mash. Stir in the melted butter, brown sugar, egg and vanilla extract until well combined. 

Separate bowl beside the bananas with dry ingredients.

Step 3. Get out a separate bowl for the dry ingredients. Whisk together the flour, baking powder, baking soda, salt and cinnamon.

Step 4. Whisk the flour mixture into the banana mixture until just combined using a stand mixer or hand mixer. Scrape down the sides with a rubber spatula.

Step 5. Next, pour the batter into the prepared loaf pan.

Step 6. Bake until a toothpick inserted into the center of the bread comes out clean. Closely watch the bread and if the top starts getting too brown, lightly tint the bread with foil.

Step 7. Allow to cool for a few minutes. Then carefully remove the bread from the loaf pan and let the bread cool completely on a wire rack.

Storage

Store any leftover bread in an airtight container at room temperature for up to 4-5 days.  

Pro Tips

  • Cover with foil. If you notice the bread is getting too brown and it’s still baking, cover with aluminum foil.
  • Don’t overmix the batter. Blend the ingredients until just combined.
  • Leave a few banana chunks. When you mash the fruit, leave a few pieces of banana for the best banana bread.
  • Make muffins. Use the batter to make banana muffins instead of bread if you desire. Adjust the cooking time as the muffins will not take as long.
