Ingredients

- All Purpose Flour. In order to measure the flour accurately, spoon the flour into a measuring cup. When you scoop flour, it often packs too much into the cup.
- Baking Soda. Try one of the Best Baking Soda Substitutes.
- Butter. Allow the butter to soften at room temperature.
- Large Eggs. The eggs should be room temperature. They will mix more evenly and help to create a light and fluffy texture.
- Large Bananas. The mashed bananas need to be ripe. It’s a great time to use those bananas with brown spots.
- Pink, Purple, Green and Blue Food Gel Coloring. Gel food coloring is what I prefer for vibrant colors.
- Rainbow Jimmie Sprinkles. Make sure to use jimmies so they don’t bleed into the batter.
Icing
- Powdered Sugar. The icing will be smoother if you sift the powdered sugar first.
- Milk. You can use any milk you prefer but I like to use whole milk.
- Rainbow Jimmie Sprinkles. Makes the bread so festive.

How to Make Unicorn Bread
- Step 1. Preheat the oven and prepare the pan. Preheat the oven to 350 degrees Fahrenheit and spray a 9X5 loaf pan with a non-stick cooking spray.

Step 2. Combine the dry ingredients. In a large bowl, whisk together the flour, baking soda and salt.

Step 3. Combine the butter and sugar using a separate bowl. In a separate bowl, cream butter and sugar together with a hand held mixer or bowl of a stand mixer.

Step 4. Gradually add the eggs until combined. Then mix in the mashed bananas.

Step 5. Next, gradually add in the flour mixture until just combined. Be careful not to over mix. You can use the dough hook if using a stand mixer.

Step 6. Divide the batter and dye with gel food coloring into 4 small bowls. Add drops of the purple gel food coloring to one bowl, drops of the pink gel food coloring to the other bowl, green gel food coloring and blue.

Step 7. Use medium ice cream scoopers to dollop the batter into the loaf pan. Layer dollops of the pink batter, green batter, purple and so forth. Add remaining sprinkles on top. Continue until all of the batter has been used.

Step 8. Allow the bread to bake until a toothpick inserted into the center of the bread comes out clean.

Step 9. Allow the bread to cool in the bread pan for 10-15 minutes. Then move to a wire rack to cool completely.

Step 10. Make the icing by whisking together the powdered sugar and milk. Pour this glaze mixture over the cooled bread and top with Rainbow sprinkles.

Step 11. Allow to cool and then slice the bread.

- 1/2 teaspoon Salt
- Pink Purple, Green and Blue Food Gel Coloring
- 1/2 cup Rainbow Jimmie Sprinkles
For the Icing:
- 2 cups Powdered Sugar
- 3 Tablespoons Milk
- 1/2 cup Rainbow Jimmie Sprinkles
Instructions
- Preheat the oven to 350 degrees Fahrenheit and spray a 9X5 loaf pan with a non-stick cooking spray.
- In a large mixing bowl, whisk together the flour, baking soda and salt.
- In a separate bowl, beat together the butter and sugar with a hand held mixer or stand up mixer.
- Mix in the eggs (one at a time) until combined. Then mix in the mashed bananas.
- Gradually add in the flour mixture until just combined. Be careful not to over mix.
- Divide the batter evenly into 4 small bowls. Use the food coloring to dye each bowl a different color. 1 pink, 1 purple, 1 green and 1 blue. Add the food coloring until each one is a vibrant color.
- Scoop a few dollops of each of the different batters into the loaf pan. Then sprinkle some sprinkles on top. Continue this process until all of the batters are used.
- Bake for 50-65 minutes until a toothpick inserted into the center of the bread comes out clean.
- Cool the bread in the bread pan for 10-15 minutes and then move to a wire rack to cool completely.
- For the icing, whisk together the powdered sugar and milk. Pour this mixture over the cooled bread and top with Rainbow sprinkles.
- Let sit until the icing cools and then the bread is ready to slice, serve and enjoy!
