Ingredients

Ingredients needed - heavy whipping cream, sweetened condensed milk, vanilla, food coloring, unicorn sprinkles
  • Heavy Whipping Cream – Keep the cream cold for the best whipping results and a creamy texture.
  • Sweetened Condensed Milk – Adds the perfect level of sweetness and helps create a smooth, dreamy ice cream.
  • Vanilla Extract – Use pure vanilla extract to achieve the best flavor.
  • Food Coloring – Choose your favorite colors; popular choices for a unicorn look are pink, purple, blue, and yellow.
  • Unicorn Sprinkles – Adds a fun, whimsical finishing touch and makes the ice cream visually stunning.

Find the complete list of ingredients at the bottom of the post.

Variations

  • Flavor Extracts – While vanilla extract gives the classic flavor, try lemon or orange extract for a fun creamsicle-inspired twist. You can also experiment with almond or coconut extract for unique flavors.
  • Food Coloring Options – Gel food coloring is recommended for bright, vibrant colors. Natural food coloring can be used but will result in softer, muted tones. Mix and match colors to create your own magical unicorn palette.
  • Freezing Containers – A loaf pan works perfectly for freezing this ice cream, but you can also use dedicated ice cream containers with lids for easy storage and scooping.
  • Sprinkle Fun – Customize the toppings to match your theme. Rainbow sprinkles, edible glitter, or even crushed candy can add extra flair and whimsy to your ice cream.
  • Fruity Add-Ins – Fold in small pieces of fresh fruit like strawberries, blueberries, or raspberries for added texture and flavor.
  • Chocolate Twist – Swirl in chocolate or caramel sauce before freezing for a marbled unicorn effect.
  • Mini Mix-Ins – Add mini chocolate chips, crushed cookies, or marshmallows for extra fun in every bite.

Step By Step Instructions

  • Step 1. Chill a loaf pan. Place a loaf pan in the freezer at least 30 minutes before you begin.
  • Step 2. Chill the bowl and whisk. Place the bowl and whisk in the freezer at least 30 minutes before you begin.

Step 3. Beat the whipping cream. Use a large bowl or stand mixer bowl with whisk attachment, beat whipping cream until stiff peaks form. You can also use a hand mixer.

Step 4. Get out a separate bowl. Stir together the sweetened condensed milk and vanilla extract until smooth. Gently fold into whipped cream.

Small mixing bowls with different colors of ice cream mixture.

Step 5. Separate the mixture into 4 bowls. Dye each of the bowls pink, purple, blue and yellow with the food coloring.

Ice cream mixture dolloped in loaf pan.

Step 6. Remove the loaf pan from the freezer. Place dollops of each of the colors of the mixture. You want to fill the pan hallway through, so it has swirls.

Step 7. Alternate with sprinkles. Then add more dollops of the colored mixture and the remaining sprinkles on top. You can swirl with a butter knife if desired.

Step 8. Cover and freeze the ice cream mixture for 4-6 hours but I like to freeze overnight.

Storage

Freezer: Store the ice cream in an airtight container for up to 2 weeks.

Keep Covered: Use a lid or plastic wrap to prevent ice crystals from forming and keep the texture smooth.

Serving Tip: Let the ice cream sit at room temperature for 5–10 minutes before scooping for easier serving.

Avoid Refreezing: Once softened, do not refreeze melted portions to maintain creaminess.

Layer Protection: If adding sprinkles or other toppings, store them separately and add just before serving to prevent sogginess.

Pro Tips

  • Start with Cold Supplies – Chill your mixing bowl and whisk in the freezer before whipping the cream. This helps the cream whip faster and hold stiff peaks.
  • Fold Gently – Carefully fold the whipped cream into the sweetened condensed milk. This keeps the mixture light, airy, and fluffy.
  • Use Gel Food Coloring – Gel colors give the brightest, most vibrant unicorn swirls compared to liquid or natural food coloring.
  • Don’t Let It Sit Out – Ice cream softens quickly. Scoop, serve, and return leftovers to the freezer immediately to maintain texture.
  • Layer Colors Separately – Add each colored portion to the pan without mixing for distinct, beautiful unicorn swirls.
  • Choose Metal Pans – Metal loaf pans freeze ice cream more evenly than glass pans, giving a smoother texture.
  • Don’t Overmix – Overmixing the colors or folding too aggressively can deflate the whipped cream and reduce fluffiness.
  • Add Toppings at Serving – Keep sprinkles, edible glitter, or candy separate until serving to maintain crunch and color vibrancy.
  • Room Temperature for Scooping – Let ice cream sit at room temperature for 5–10 minutes before scooping to make serving easier.
  • Customize Flavors – Vanilla is classic, but you can add almond, lemon, or orange extract for a unique twist.
