It turns out so delicious and perfect every time. You might not ever bake another cheesecake! It is such an easy air fryer cheesecake recipe.

Ingredients

Ingredients for air fryer cheesecake - graham cracker sheets, butter, brown sugar, cream cheese, vanilla, eggs, cornstarch, cherry pie filling.

Crust

  • Graham Cracker Sheets. Use regular honey grahams.
  • Butter. The butter needs to be melted.
  • Brown Sugar. Homemade Brown Sugar Recipe is so easy.

Cheesecake Layer

  • Cream Cheese. Softened at room temperature.
  • Vanilla Extract. Use pure vanilla extract for the best flavor in the cheesecake batter.
  • Large Eggs. Room temperature
  • Cornstarch. This helps to thicken the batter.

Variations

  • Toppings. We used cherry pie filling, but you can substitute anything you like. Some ideas include apple, strawberry and blueberry.
  • Chocolate Cheesecake. Chocolate fans might want to try adding cocoa powder to the cheesecake mixture to make a chocolate cheesecake.
  • Fresh Berries. Skip the pie filling topping and add fresh fruit. We love to dice fresh strawberries and blueberries and garnish the cheesecake.
  • Crust. We used graham crackers to make the graham cracker crust but you can use cookies. Oreo cookies make a great crust.

Step By Step Instructions

  • Step 1. Prepare the pan. Spray a 7X3 springform pan with cooking spray. Don’t forget to make sure that the springform pan will fit in your air fryer.

Step 2. Make the graham cracker crumbs. Use a food processor to crush the graham cracker sheets. Then combine with the melted butter and sugar.

Step 3. Press the mixture into the bottom of the springform pan. Next, freeze the crust.

Step 4. While the crust freezes, beat the cream cheese with the sugar until light and fluffy. Use an electric mixer.

Step 5. Then add in the ingredients for the cheesecake layer. Mix until creamy and combined.

Step 6. Pour the cheesecake mixture into the crust. Put the pan in the Air Fryer basket at 350 degrees for 30-35 minutes. Then turn the air fryer off but let the cheesecake sit in the Air Fryer for 30 minutes.

Step 7. Next, move to a wire rack to cool completely. Then cover in plastic wrap and refrigerate for at least 4 hours before serving.

Step 8. Carefully remove the sides of the springform pan.

Step 9. Slice and serve topped with the cherry pie filling.

Storage

Store any leftovers in the refrigerator for up to 3-4 days.  

Pro Tips

  • Preheating option. If your air fryer does not have a preheat option, then run the air fryer at 350 degrees for 5 minutes before cooking the cheesecake. 
  • Crushing the graham crackers. If you do not have a food processor, place the graham crackers in a sealed ziplock bag and roll with a rolling pan to crush the graham crackers.
  • Cooking time. Air fryer cooking times can vary. Keep an eye on this as you learn how your air fryer might vary.

  • 4 Tbsp Butter melted
  • 2 Tbsp Brown Sugar

Instructions

For the Crust:

  • Spray a 7X3 springform pan with a non-stick cooking spray and make sure that the springform pan will fit in your air fryer.  Then set it aside.
  • Place the graham cracker sheets in a food processor and process until they are formed into small crumbs.
  • Mix together the crumbs, melted butter and brown sugar in a large mixing bowl  until well combined.  Press this mixture into the bottom of your springform pan and have it go up the sides of the pan approximately 1 inch.
  • Place the crust into the freezer while you form the cheesecake layer.

For the Cheesecake Layer:

  • Beat the cream cheese with the sugar in a large stand up mixer or with a hand held mixer until the mixture is light and fluffy.
  • Then add in all of the ingredients for the cheesecake layer and mix until creamy and combined.
  • Remove the pan from the freezer and pour the cheesecake layer mixture on top evenly.
  • Tap the bottom of the pan on the counter to make sure that there are no air bubbles and to ensure that the layer is even. Cover the top of the pan with foil.

To Air Fry:

  • Preheat an Air Fryer to 350 degrees F.
  • Place the pan in the Air Fryer basket.
  • Air Fry at 350 degrees F for 30-35 minutes until the edges are slightly browned and the center of the cheesecake is set but still jiggly.
  • Turn the air fryer off but let the cheesecake sit in the Air Fryer for 30 minutes.
  • After this time, move to a wire rack to cool completely and then cover in plastic wrap and refrigerate for at least 4 hours before serving.
  • Carefully remove the sides of the springform pan.
  • Serve topped with the cherry pie filling and enjoy!
