Variations
- Pudding. Substitute any type of pudding you like to change the flavor. I think cheesecake and vanilla pudding would be delicious.
Butterscotch is another great idea. You can easily use this recipe as a base for other great types of cookies.
- Chocolate Chips. Instead of white chocolate chips, try milk chocolate chips. Another idea is to mix both together. Peanut butter morsels also make a delicious flavor combination with the banana.
- Nuts. Add a handful of nuts to the cookie dough. Try chopped walnuts, pecans or peanuts. Just use what you have on hand or prefer.
- Cookie sandwiches. Add cream cheese icing and sandwich two delicious cookies together. This is really rich and delicious for an amazing treat.
- Mashed banana. For even more banana flavor, add a whole banana mashed into the cookie dough mixture. If you like more texture, chop them into small pieces instead of mashing them.
- Topping. Melt some of the white chocolate chips and drizzle all over the tops of the cookies.
How to Make Banana Pudding Cookies
- Step 1. Go ahead and preheat the oven to 350 degrees.
Step 2. Next, beat the butter and both types of sugars until light and fluffy. I recommend using a stand mixer or hand mixer.
Step 3. Then add the pudding mix, eggs and vanilla extract to the butter mixture. Combine together.
Step 4. Then get out a separate bowl and combine the dry ingredients together. Next, gradually add the flour mixture into the egg mixture. Try not to over mix.
Step 5. Carefully fold in the white chocolate chips and crushed wafers into the batter. This step needs to be combined by hand.
Step 6. Finally, form the cookies and place on cookie sheet. I like to use a cookie scoop.
Step 7. Bake the cookies for 10 to 12 minutes until slightly golden brown around the edges. Then place a few extra white chocolate chips on the tops of the cookies. Allow to cool on the baking sheet and transfer to a wire rack to cool completely.
Storage
Leftover cookies should be stored inside an airtight container at room temperature. They will last up to 4 to 5 days.
Just make sure you keep the lid on tight to keep the cookies fresh.
Can You Freeze Banana Pudding Cookies?
Yes, the cookies can be frozen up to 3 months. Place them inside a freezer container or bag that is airtight.
Make sure to let the cookies cool completely if freezing. We love these cookies so much that we often make double just to have extra to freeze.
When ready to eat, allow the cookies to thaw at room temperature. I like to take them out of the freezer container during this process so the moisture does not get all over the cookies.
This will help them to keep the same great texture and flavor before freezing.
Pro Tips
- Make sure that you use instant pudding and not the type you cook.
- Don’t mix the banana pudding mix according to the box. The dry pudding mix goes right into the cookie dough mixture.
- Don’t overmix the dough. Just combine the dough until just combined.
- It is optional but a cookie scoop will help to form the cookies quickly. It will also ensure they are all uniform and the exact same size. This also helps the cookies to bake evenly.
- Make sure to space the cookies on the baking sheet. They will spread and need room to do so.
- Ovens vary so keep in mind baking times might as well. It is a good idea to keep an eye on the cookies.
- It is important that the cookies set before on the baking sheet before moving to the cooling rack. If you try to move them too soon, the cookies will crumble and not hold its shape.
- Use the paddle attachment in the stand mixer if using this. It works best to combine the dough.
- Line the baking sheet with a silicone baking mat or parchment paper. This will make clean up super easy and help to keep your pans in good shape too.
- Chill the dough. This is optional. If you find the dough is sticky and hard to work with, allow it to chill for 20 minutes in the fridge. Then shape into cooking dough balls.
