Cookies

  • Yellow Cake Mix. You can use any brand you prefer.
  • Eggs. I used large eggs.

Cinnamon & Sugar Mixture

  • Granulated Sugar and Ground Cinnamon. You can adjust the mixture to preference if you like more cinnamon.

Variations and Additions

  • Chocolate Chips. Toss in a handful of chocolate chips into the batter.

Step By Step Instructions

Step 1. Get out a small bowl and combine sugar and cinnamon with a spoon.

Step 2. Use a separate large bowl and combine cake mix, eggs and oil. The batter will be thick but that is normal.

Step 3. Use a cookie scoop to shape dough into small 1-inch balls.

Step 4. Then roll balls in the cinnamon-sugar mixture.

Step 5. Then place the cookie dough balls on prepared cookie sheets lined with parchment paper.

Step 6. Use a glass to flatten the cookies out slightly.

Step 7. Finally, bake the cookies for 8 to 10 minutes. The edges of the cookies should brown slightly.

Step 8. Let the cookies set for 5 minutes. Then move the cookies with a spatula to a cooling rack to cool completely.

Storage

Store the leftover cookies in an airtight container or bag up to 1 week.  I keep a piece of bread in the container with the cookies to keep them moist.  

You can also freeze the cookies for prolonged storage. I prefer to freeze the cookie dough. Flash freeze the dough balls on a baking sheet for 1 to 2 hours.

Then transfer to a freezer bag or container. They won’t stick together with this method. When ready to enjoy, bake as normal but allow a few extra minutes to the cooking time.

Pro Tips

  • Don’t overbake the cookies. They will continue to set on the baking sheet.
  • Refrigerate the dough if needed. While you don’t need to chill the cookie dough, you can if needed. If the dough is sticky, refrigerate to make it easier to manage.
  • Use a cookie scoop. It makes it easier to form the cookies and they will all be uniform.
  • Line the pan. I love to use silicone baking mats.
  • Try other cake mix flavors. Feel free to substitute other types of cake mix. White cake mix is also good.

Instructions

  • Mix the cinnamon and sugar in a small bowl and set aside.
  • Preheat the oven to 375 degrees Fahrenheit.
  • In a mixing bowl, mix the cake mix , eggs and oil (batter will be thick).
  • Form the batter into small balls (I used a cookie scoop) and roll them in the cinnamon and sugar mixture.
  • Then place the cookies on baking sheets.
  • Flatten the cookies out slightly using the bottom of a glass.
  • Bake for 8 – 10 minutes until the edges of the cookies start to brown slightly.
  • Allow the cookies to set for 5 minutes and then move the cookies to a wire rack to cool completely.
  • Then the cookies are ready to enjoy!
