What is Cheesecake Pudding?

It is a delicious cream cheese mixture that comes together quick and easy. Skip the instant pudding mix and make this homemade recipe instead.

It is so rich, and the flavor is amazing without much work.

Ingredients

Ingredients for Cheesecake Pudding: graham cracker crumbs, butter, fresh fruit, sugar, vanilla, butter, cream cheese, powdered sugar.

 

Graham Cracker Crust

  • Graham Cracker Crumbs 
  • Butter (melted) 
  • Granulated Sugar 

Cheesecake Pudding: 

  • Cream Cheese
  • Milk 
  • Vanilla Extract 
  • Lemon Juice 
  • Fresh Berries

Substitutions and Variations

  • Topping. Substitute the fresh fruit for Cherry Pie Filling, Blueberry Pie Filling or Strawberry Pie Filling.
  • Fruit. I used raspberries and blueberries to top each dessert. Other ideas include strawberries and blackberries.
  • Crust. Instead of plain graham crackers, try using cinnamon or chocolate graham crackers.
  • Large bowl instead of individual desserts. This recipe is easy to serve in a large bowl if you prefer.
  • Vanilla Pudding. Try using vanilla pudding instead of cheesecake pudding for another yummy flavor.
  • Cookie Crust. Another tasty idea for the crust is to use cookies. Oreo Cookies would be delicious.
  • Lemon Zest. Add a little bit of lemon zest to the cheesecake mixture.

How to make Cheesecake Pudding

Step 1. Mix together the graham cracker crumbs, melted butter and sugar together in a small bowl.

Step 2. Divide the mixture between the 4 cups. Press the mixture evenly down into the bottom each cup.

Step 3. Get out a small saucepan. Stir together the milk, sugar and cornstarch. Then bring the mixture to a low boil. Make sure to stir constantly.

Step 4. Then remove the pan from the heat.  Add the cream cheese, vanilla extract and lemon juice. Combine this together until the mixture is smooth.  Allow to cool.

Step 5. Use a spoon to pour the pudding mixture in an even layer on top of the graham cracker crusts. Divide evenly between the cups. Allow to chill for several hours.

Step 6. Then the pudding is ready to serve topped with your favorite type of fresh berries. 

Expert Tips

  • Refrigerate the mixture before topping. Allow the pudding time to set before garnishing with fresh fruit.
  • Whipped Cream. Top each serving with cool whip if desired. I like to make homemade whipped cream and it is very easy.
  • Room temperature Cream Cheese. The pudding mixture will blend easier if the cream cheese is room temperature.
  • Graham Cracker Crumbs on top. Reserve some graham cracker crumbs to sprinkle on top.
  • Whole milk is recommended. The cheesecake filling is best made with whole milk.

Instructions

For the Graham Cracker Crusts:

  • Stir together the graham cracker crumbs, butter and sugar together in a small bowl.
  • Press the mixture evenly down into the bottom of 4 serving cups or mason jars.
  • Gently press the mixture down into the bottom of the cups and set aside while you prefer the pudding mixture.

For the Cheesecake Pudding:

  • In a small saucepan, stir together the milk, sugar and cornstarch.
  • Bring the mixture to a low boil over medium low heat, stirring constantly.
  • Remove the pan from the heat.  Stir in the cream cheese, vanilla extract and lemon juice until the mixture is smooth.
  • Let the mixture cool completely at room temperature.
  • Add the pudding mixture on top of the graham cracker crusts in the serving cups.
  • Chill for 2-3 hours.
  • Then the pudding is ready to serve topped with your favorite type of fresh berries.  Enjoy!
