Variations
- Chocolate. You can easily dip these in any of your favorite chocolate. Semi-Sweet Chocolate, Milk Chocolate, dark chocolate or White chocolate all work great for this recipe. Just add coconut oil to the chocolate to thin it out.
- Peanut Butter. If you like peanut butter, melt some peanut butter morsels and drizzle over the chocolate. Allow to set.
- Sprinkles. Any type of sprinkles can be used in this recipe. It is easy to change for holidays and other occasions. Switch to red and green sprinkles for Christmas. Orange for Halloween.
- Toppings. Crushed candy or cookies can be sprinkled on the chocolate before it sets. It adds even more fun to this recipe. Sea salt is also delicious on top.
- Drizzle. Sometimes, I like to melt more chocolate or candy melts to drizzle on top of the rice krispie treats. If you dip in milk chocolate, it is so pretty to drizzle melted white chocolate on top.
- Popsicle sticks or Paper Straws. Insert popsicle sticks or paper straws into the sweets before dipping in chocolate. It is fun to eat and serve this way.
- Gluten free. Substitute gluten free rice krispie cereal to make the recipe gluten free.
Step By Step Instructions
- Step 1. Prepare the baking dish. Using butter or cooking spray, prepare a 9 x 13 inch pan or line with parchment paper.

Step 2. Melt butter in a medium to large saucepan using low heat. Add the marshmallows and stir until completely melted with a spatula or wooden spoon. Then remove the pan from heat.

Step 3. Pour the Rice Krispie cereal and stir until the cereal is coated. Press the mixture into an even layer in the prepared pan. l like to butter my hands or use wax paper to press the mixture into the pan. Do not pack them down or the Rice Krispie treats will be hard.

Step 4. Let the Rice Krispies set. Then cut the Rice Krispie treats into 12 rectangles.

Step 5. Melt the chocolate in a microwave-safe bowl. Heat in 30 second increments, stirring after each interval. Coat in chocolate and top with sprinkles. Then place on a piece of parchment paper. Top with the sprinkles and allow to set at room temperature.

Expert Tips
- Fresh marshmallows. Make sure to use fresh marshmallows in this recipe for best results. Older marshmallows do not melt as well as fresh.
- Low heat. Melt the butter and marshmallows using low heat.
- Allow the chocolate to harden. It needs to harden at room temperature. Do not refrigerate.
- Don’t press the mixture too hard. Once the mixture is in the baking dish, gently press into the pan. Do not press too firmly or it will make the mixture hard.
Storage
Store inside an airtight container at room temperature up to 3 to 4 days. I recommend placing wax paper in between the layers of bars to prevent them from sticking.
Frequently Asked Questions
You can place hardened rice krispy treats in the microwave for 5-10 seconds to soften them. This trick works for individual bars.
If you are trying to soften an entire batch, place a slice of white sandwich bread in the storage container. The moisture from the bread should be absorbed by the rice krispie treats and help to soften them.
There are a couple of culprits for soggy rice krispie treats. Too much butter in the recipe can result in soggy treats. It is important to only use the amount specified in the recipe.
Another issue is the crispy rice cereal is stale or expired. It can make the rice krispie treats soft.
Melt the chocolate chips inside a microwave safe bowl. Then melt the chocolate in intervals of 30 seconds stirring after each one. This will prevent it from burning and overcooking the chocolate.
Dip each rice krispie treat in chocolate and allow any excess chocolate to fall off. Then place the bars on a baking sheet lined with parchment paper.
Yes, you can melt the butter and marshmallows in a large pot on the stove if desired.
