Variations:
- Change the colors – You can always change the gel food coloring of the dough or add in additional colors.
- Change the Sprinkles – Change the sprinkles to what you have on hand.
- Make for Different Holiday – These cookies would be great for different holidays.
Step by Step Instructions:
- Step 1 – Mix together dry ingredients – In a mixing bowl, stir together the flour, baking powder and salt.
- Step 2 – Blend the wet ingredients – Next, in a separate mixing bowl, blend together the softened butter with the sugar until smooth. (I used a stand mixer or a hand-held mixer for this). Then add in the egg and vanilla and blend until combine.
- Step 3 – Mix together wet and dry ingredients – Then gradually hand stir in the flour mixture until just combined. Do not over mix.
- Step 4 – Divide Dough – Divide the dough evenly into 2 separate bowls.
- Step 5 – Add food coloring to the separate doughs – Dye one bowl of the dough red with the red food coloring and the other green with the green food coloring. Stir in the food coloring until the color is completely incorporated.
- Step 6 – Chill the Dough – Wrap each dough with wax paper and refrigerate for 30 minutes to 1 hour until the dough is firm.
- Step 7 – Roll the dough – Remove the dough from the refrigerator. Then place the red dough on parchment paper or wax paper. Lightly dust with flour. Then with a rolling pin, roll out the dough until a rectangle approximately ¼ in thick.
- Step 8 – Roll the other dough – Follow the same process with the green dough.
How to Make the Pinwheel Design:
- Step 1 – Layer the red and green dough – Then place the green dough on top of the red dough leaving the parchment paper or wax paper on the outside of the dough.
- Step 2 – Roll Dough Together – Then remove the top wax or parchment paper. Gently roll the rolling pin over the top so that the doughs stick together.
- Step 3 – Remove the Wax Paper – Then roll the log gently starting on one side of the rectangle and gently remove the bottom wax or sheets of parchment paper as you roll. (If the dough is too soft, refrigerate it again so that it’s easier to work with).
- Step 4 – Roll dough in sprinkles – Next pour the sprinkles on a baking sheet. After the log has been formed, gently roll the log in the sprinkles so that they stick to the outside of the log.
- Step 5 – Refrigerate – Then wrap the entire log with plastic wrap after it’s formed and refrigerate it for 30 minutes to 1 hour.
- Step 6 – Prepare Oven – Preheat the oven to 350 degrees F.
- Step 7 – Cut dough into slices – Remove the log from the refrigerator, unwrap and cut the log into ¼ inch thick slices on long side to make the cookies. Then place them on an ungreased cookie sheet approximately 2 inches a part.
- Step 8 – Bake Cookies – Finally, bake for 12 to 15 minutes until the cookies are set.
- Step 9 – Cool Cookies Remove the the oven, cool for approximately 5 minutes and then transfer to a wire rack to cool completely.
- Step 10 – Serve and Enjoy – These cookies turn out light and fluffy. The texture is amazing and they are a delicious addition to all your holiday baking.
Expert Tips
- Stand Mixer – You will need a stand mixer with paddle attachment or a hand-held mixer. Either of these will work but I prefer my stand mixer. It makes everything even easier and definitely gets plenty of use. Make sure to scrape the sides of the bowl of a stand mixer when combining ingredients.
- Sticky Dough – If the cookies are sticking or hard to work with, just place in the fridge to harden the dough.
- Cool on Baking Sheet – Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack. This will help to cookies settle and prevent them from breaking.
- Separate Dough – If you are using multiple food coloring, make sure to separate dough for the separate food coloring. This ensures that you have distinct colors for your pinwheels.
- Chill Dough – Make sure to chill the dough before slicing. You do not want your dough to be to soft when slicing.
- Overbaking – When baking the cookies, make sure to watch closely. If you want soft cookies, cook the cookies until they are about done. They will finish cooking on the baking sheet.
- Cookie Dough Batter – When you are ready to mix the dry and wet ingredients together, don’t over mix. Mix the two bowls together until they are combined.
Can I Make these Ahead of Time?
If you wanting to make the dough in advance you can do so, but make sure to wrap and store in the refrigerator. Roll the dough in a log and wrap in a plastic wrap.
Make sure to bake the dough within 3 days so the color doesn’t bleed into each other.
How to Store:
When you are ready to store your leftovers, place in a air tight container at room temperature. If you are leaving on a cookie tray, make sure the tray is covered with a plastic wrap.
Can you Freeze?
Yes, you can freeze the cookie dough. We love to plan ahead for the Christmas holiday and prepare our dough for baking. There are two ways to freeze the dough.
- Freeze the Log – You can freeze the cookie dough as a whole in the log. Make sure to wrap the dough with saran wrap and place in the a freezer bag. This is my preferred method.
- Slice and Freezer – You can also go ahead and slice the dough in freeze. This might be a good idea if you only want to thaw a small portion at a time.
- Thawing – When you are ready to bake, allow the dough to thaw on it’s own. Then slice and bake according to directions
