Why We Love This
With only 5 simple ingredients, anyone can make this tasty and delicious treat. This cookie recipe keeps your kitchen cool without ever needing the oven.
The creamy peanut butter mixture has the best flavor and the perfect chewiness. Each bite is the best sweet treat.
Ingredients
- Cornflake Cereal. It’s important the cereal is fresh and not stale.
- Light Corn Syrup. Gives the cookies the perfect texture.
- Creamy Peanut Butter. I like to use creamy peanut butter for the best consistency.
- Vanilla Extract. Neve use imitation vanilla. It doesn’t have the same flavor as pure vanilla.

Variations and Substitutions
- Cereal. Substitute rice krispie cereal, Chex cereal or Crispix in this recipe. You can also use frosted cornflakes but it will be extra sweet. Any of these would make great variations to this recipe.
- Topping. Drizzle melted chocolate on top of the cookies. Sprinkles or nuts would be fun too. I love walnuts.
- Peanut Butter. For best results, use creamy peanut butter. The texture is the best using this variety.
- Nut Butters. If you do not want to use peanut butter due to allergies, try using sunflower butter or almond butter.
- Mini Marshmallows. You can substitute these for the corn syrup and still have the yummy gooey texture.
- Chocolate chips. Fold in chocolate chips when you add the cereal for a chocolate treat. We prefer to use the mini chocolate chips.
- Seasonal. Dye the mixture green and make a wreath style cookie for Christmas. You can add embellishments for wreath decorations.
Step By Step Instructions
Step 1. Combine the sugar and corn syrup mixture together over medium heat.
Step 2. Then add the peanut butter. Stir and bring the mixture to a low boil.
Step 3. Once the mixture is boiling, remove from the heat and stir in the vanilla extract and corn flakes cereal. Make sure to stir until the cereal is coated in the peanut butter mixture.
Step 4. Then use a cookie scoop to form the cookies on a baking sheet lined with parchment paper or wax paper. Work quickly to form the cookies before the mixture hardens. Allow to set on the baking sheets for 20-30 minutes.
Storage
Store the leftover cookies in an airtight container at room temperature for up to 1 week. As long as you use an air tight container, these home cooked cookies will stay nice and fresh.
Do not refrigerate the cookies as it will cause them to dry out and get too hard. Allow them to set at room temperature before serving. They will be perfect.
Pro Tips
- Be careful when stirring in the cornflakes so they do not break or crush the cereal. Just fold in the cereal gently for best results.
- Form the cookies quickly so the mixture does not harden.
- We like to use cookie scoops because it is super fast and easy. It also helps to ensure each cookie is the same size.
- Allow the cookies time to set before serving. It will take about 20 to 30 minutes to fully set. If you try to handle them too soon, they will fall apart.
