This Easter cookie cake idea is packed with loads of chocolate chips and pastel M&M’s. It is then topped with fun Easter Sprinkles, more M&M’s and piped frosting. It’s festive served alongside Bunny Bait Recipe.

Ingredients

Ingredients needed - butter, brown sugar, sugar, egg, vanilla, flour, baking soda, salt, chocolate chips, M&M's, sprinkles, powdered sugar, milk
  • Butter. Softened at room temperature so it’s easy to combine.
  • Brown Sugar. It should be packed into the measuring cup. You can also use Homemade Brown Sugar Recipe.
  • Granulated Sugar. The combination of white sugar and brown sugar give the cake the perfect taste and texture.
  • All Purpose Flour. Spoon the flour into the measuring cup so you don’t pack too much flour into it. Excess flour will make the cake dry and crumbly.
  • Semi-Sweet Chocolate Chips. Always use a good quality chocolate for the best results.
  • Pastel M&Ms. Easter M&Ms are perfect for this recipe with all the pretty pastels.
  • Pastel Sprinkles. Complete the look with pastel sprinkles on top.

Frosting

  • Powdered Sugar. Sift the powdered sugar so it is smooth.
  • Unsalted Butter. Make sure to use real butter and let is soften at room temperature.
  • Vanilla Extract. Pure vanilla extract is best.

Variations and Substitutions

  • Change the M&M’s – You can easily use pastel M&M’s or other colors. It is fun to mix and match the M&M’s for the holiday that you are making this for.
  • Cookie Cake – We made the cookie cake from scratch. You can use already prepared cookie and press the dough into the prepared pan. Then continue the recipe as indicated.
  • Sprinkles – Feel free to use different sprinkles. Pastel are perfect for Easter but you can also use bright colors.
  • Chocolate Chips – We used semi-sweet chocolate chips, but you can use dark chocolate chips as well or white chocolate chips.
  • Frosting – Feel free to use different frosting. You can use vanilla frosting or add some food coloring to change the color.
  • Nuts – If you like nuts in your cookie cake, you can easily mix in the chopped nuts in your cookie batter.
  • Candy. Sprinkle small Cadbury Eggs around the cake. The mini eggs are the perfect size if you want to use Cadbury Chocolate eggs.
  • Step 1 – Prepare the oven and cake pan – Preheat the oven to 350 degrees F. Spray a 9 inch round cake pan or springform pan with a non-stick baking spray.

Step 2. In a large mixing bowl, beat together the butter with brown sugar and granulated sugar until creamy.  Then add in the egg and vanilla extract. You can use a stand mixer or hand mixer.

Step 3. Next, add in the dry ingredients. Mix in the baking soda and salt.  Then slowly add in the flour until just combined.

Step 4. Stir in the chocolate chips and half of the M&Ms.

Step 5. Once combined, press the cookie dough batter into the prepared pan. Then press the remaining M&Ms and the sprinkles on top.

Step 6. Bake for 20-25 minutes or until the edges are just starting to turn slightly golden brown.  Be careful not to overcook. Then allow to cool completely.

Step 7. While the cake is cooling, prepare the buttercream frosting.  Beat the butter with a handheld mixture until smooth.  Then slowly add in the powdered sugar, vanilla extract and milk until creamy. Pipe the frosting with a star tip onto the edges of the cookie cake and top with more sprinkles and M&Ms if you prefer.

The options are endless on how to decorate this Easter Cookie Cake. We love to use pastel candies and sprinkles. But you can use what you prefer. Top the Easter Cookie Cake with frosting with a piping bag and piping tip.

How to serve?

Once you have prepared the cookie cake, place it on a cake stand so it is easier to decorate and serve.

Bake for 20-25 minutes or until the top is a beautiful golden brown. Be careful not to overcook. The outside edge of the cake will be slightly browner than the center of the cake.

  • Prepare in a Pie Plate – This cake can be made in a 9 inch pie pan as well. 
  • Combining the Ingredients – Make sure not to over mix the cookie dough or the cookie cake will be tough.  Combine the wet ingredients and dry ingredients until well blended.
  • Baking Cookie – Make sure to not overcook cookie. It is better to cook cookie until just about done and allow to finish cooking after removing from oven.
  • Remove Cookie Cake – We like to remove the cookie cake from the pan to easily cut the cookie for serving.
