This recipe for blackberry cobbler is a keeper. It is super easy but results in a fabulous dessert. Blackberries provide the perfect balance of flavor and aren’t overly sweet.

Ingredients

  • Fresh Blackberries. Fresh berries are suggested.
  • All Purpose Flour. Make sure to spoon the flour into the measuring cup for the most accurate measuring.
  • Milk. Whole milk is best.
  • Vanilla Extract. Always use pure vanilla.
  • Butter. This needs to be melted.

Substitution and Additions

  • Berries. Try using other types of berries in this cobbler. Some delicious ideas include peaches, blueberries, cherries, raspberries, and strawberries.
  • Combine flavors. Make a mixed berry cobbler by combining different berries for a tasty flavor. Blueberries and blackberries taste great together.
  • Lemon juice. Add a splash of lemon juice to the blackberry mixture. It enhances the flavor of the fruit and provides the perfect balance of sweetness and tartness. Fresh lemon juice is suggested if you have it.
  • Thicken the mixture. You can add 2 tablespoons of cornstarch to the mixture before baking if it is too runny and you desire it to be thicker.
  • Butter. Margarine can be used in this recipe instead of butter. However, we suggest butter and think the flavor is better.

How to Make Blackberry Cobbler

Step 1. Prepare the blackberries. In a large bowl, gently coat the blackberries with the granulated sugar. Then allow them to sit for 20 minutes.

Step 2. Use a separate medium bowl and whisk together the dry ingredients.

Step 3. Then slowly mix in the melted butter.  Be careful not to over-mix.

Step 4. Spread the batter into the dish.

Step 5. Spoon the blackberry mixture on top of the batter.  Do not stir the blackberries into the batter or combine the ingredients.

Step 6. Bake until golden brown. It will take about 45-55 minutes until the dough rises to the top and is golden brown.

Can You Use Frozen Blackberries?

Frozen blackberries can be substituted in this recipe. Allow the frozen berries to thaw and drain them before using them in the cobbler.

Don’t skip this step because the excess juice needs to be drained before using.

Storage

Refrigerate the leftovers covered tightly with plastic wrap or transfer them into an airtight container. It will keep up to 3 to 4 days in the refrigerator.

Cobbler is best enjoyed warm and can be reheated in individual servings in the microwave.

We do not recommend freezing cobbler before it has been baked. The texture will change and the crust won’t rise as normal. If you need to make this in advance, you can prepare the berry mixture and freeze it for up to 3 months until ready to use.

Instructions

  • In a medium mixing bowl, gently coat the blackberries with the granulated sugar and let them sit for 20 minutes.
  • Preheat the oven to 375 degrees F. Spray an 8 inch square pan with a non stick cooking spray.
  • In a separate bowl, stir together the flour, baking powder, salt, milk and vanilla extract.ย  Then slowly mix in the melted butter.ย  Be careful not to over mix.ย  A few lumps are fine.
  • Pour the batter into the baking dish in an even layer.
  • Spoon the blackberry mixture on top of the batter.ย  Do not stir the blackberries into the batter.
  • Bake for 45-55 minutes until the dough rises to the top and is golden brown.
  • Serve warm topped with ice cream or whipped cream.ย  Enjoy!
