Why This Recipe Works
It’s a really simple no bake dessert anyone can make. These Frankenstein Rice Krispies are so fun and taste really great. The recipe is so easy, and the kids can help make this year after year.
Ingredients
- Rice Krispie Cereal. Make sure the rice cereal is fresh.
- Butter. Real butter is always best.
- Marshmallows. I like to use mini marshmallows because they melt easily.
- Green Gel Food Coloring. Gel food coloring makes the treats vibrant.
- Chocolate Chips. You can use regular or mini.
- Candy Eyes. Either these or candy eyeballs.
- Rolos. These are the perfect size for the bolts.
- Black Writing Gel. We used store bought and it’s easy to make the faces.

Variations
- Candy eyes. Instead of googly eyes, cut mini marshmallows into thin circles and press into the bars. Then use the black writing gel to make a dot for each eye.
- Try different faces. Give each Frankenstein a different look by arranging the eyes and such differently. It will be fun to decorate each one with a different look. You can use black candy melts or green candy melts.
- Rice Krispie Treat Pops. Insert lollipop sticks into the rice krispy treats to transform them into another fun treat. Wrap in cellophane and hand out as a party favor or treat.
- Store bought Rice Krispy Treats. If you are short on time, you can buy store bought rice krispy treats and then decorate as normal.
- Chocolate Rice Krispies Cereal. Substitute chocolate rice krispies in the recipe and skip the green food coloring. The chocolate variation will look cool and taste great.
Step By Step Instructions
- Step 1. Prepare the pan. Spray a 9X13 pan with a non-stick cooking spray and set aside.
Step 2. Melt the marshmallows and butter. Place the butter and marshmallow in a large pot. Melt over low heat and make sure to stir frequently.
Step 3. Remove the marshmallow mixture from heat. Once the ingredients melt and combine, remove from heat. Add in the drops of green food coloring until the mixture is a vibrant green coloring.
Step 4. Add the cereal. Gradually stir in the Rice Krispie Cereal. Mix until the cereal is coated in the marshmallow and butter mixture.
Step 5. Spread the mixture into the baking dish. Press the mixture into the 9X13 pan or baking sheet. Allow to cool and cut into rectangles.
Step 6. Melt the chocolate. Melt chocolate chips in a microwave safe bowl by heating it in 30 second intervals. Stir after each interval, until fully melted. Dip the top of each of the Rice Krispie treats in the melted chocolate.
Step 7. Add the sprinkles and eyes. Top the melted chocolate with the sprinkles. Use the remaining melted chocolate as glue to put the candy eyes and rolls on each of the Rice Krispie treats. The use the black writing gel to draw the mouth of each of the Rice Krispies treats and add the eyes. Allow to set.
Storage
Store in an airtight container at room temperature for up to 3-4 days. Don’t refrigerate the rice krispie treats or they will harden and the texture will change.
Freeze up to 4 months. Just make sure they have completely set before freezing. Separate the layers between wax paper to prevent them from sticking to each other.
Expert Tips
- Allow to set. Let the treats set for 30 to 60 minutes. This will allow them time to set and the eyes and such to stay in place.
- A little food coloring goes a long way. Start with a few drops of food coloring and add more as needed.
- Press the cereal mixture with parchment paper. When spreading the cereal into the mixture, use wax paper coated with cooking spray. This will help to press the mixture down without sticking to your fingers.
- Be gentle pressing the mixture into the pan. Don’t pack the cereal mixture too firmly into the pan. It will make the treats hard and dense instead of light and soft.
- Add decorations to the flat side of the bars. The side pressed down into the pan, will be flatter than the top.
Use that side to decorate the rice krispie treats. The icing and other topping will adhere better to a flat surface. - Melt the chocolate in intervals. You don’t want to burn the chocolate. Melt in 30 second intervals and stir in between each interval. This will ensure you don’t overcook the chocolate.

Frankenstein Rice Krispie Treats
Ingredients
- 6 cups Rice Krispie Cereal
- 3 tbsp Butter
- 1 pkg Marshmallows 10 oz
- Green Gel Food Coloring
- 1 cup Chocolate Chips
- Brown Sprinkles
- 24 Candy Eyes
- 24 Rolos
- Black Writing Gel
Instructions
- Spray a 9X13 pan with a non-stick cooking spray and set aside.
- Place the butter and marshmallow in a large saucepan and melt butter over low heat stirring frequently.
- Once the ingredients are melted and combined, remove from heat. Add in the green gel food coloring until the mixture is a vibrant green coloring.
- Gradually stir in the Rice Krispie Cereal. Mix until the cereal is coated in the marshmallow and butter mixture.
- Press the mixture into the 9X13 pan or baking sheet. I spray a piece of parchment paper with non-stick spray and use that parchment paper to press the cereal down into the baking dish.
- Let the Rice Krispie treats cool completely at room temperature.
- Cut into small rectangles. Line a baking sheet with parchment paper.
- Melt the chocolate chips in a microwave safe bowl by heating it in 30 second intervals, stirring after each interval, until fully melted.
- Dip the top of each of the Rice Krispie treats in the melted chocolate and place on the baking sheet. Top the melted chocolate with the brown sprinkles.
- Use the remaining melted chocolate as glue to put the candy eyes and rolls on each of the Rice Krispie treats.
- Use the black writing gel to draw the mouth of each of the Rice Krispies treats.
- Let them sit at room temperature for 30-60 minutes until all the chocolate is set. Then they are ready to serve and enjoy!
