Variations and Additions

  • Change the Cookie Flavor – You can make these whoopie pies with different flavors of cookies. We love the chocolate cake cookies, but you can also make pumpkin or strawberry cake cookies.
  • Change the frosting – Depending on what flavor of cookies you make, you can also change the frosting. Make a delicious cream cheese frosting instead of the buttercream frosting.
  •  Holiday Whoopie Pie – For a holiday whoopie pie, mix in peppermint extract to the filling for a delicious mint flavor. We have even rolled into chopped peppermint for a fun and festive look.
  • Cake Mix – You can make a whoopie pie starting with a cake mix combining with other ingredients to make a rich whoopie pie.

How to Make Whoopie Pies

  • Step 1 – First, go ahead and preheat the oven. Also, line the baking sheet with parchment paper or a silicone mat. This will help with cleanup.
  • Step 2 – Combine the dry ingredients – Second, mix the flour, cocoa powder, baking soda, baking powder and salt together.
Mixing bowl with butter and oil.

Step 3. Next, beat the sugar and ½ cup of oil until it is combined in a large bowl. The mixture will be crumbly, but this is normal.

Eggs, milk and vanilla added to bowl.

Step 4. Mix in eggs, milk, and vanilla until everything is smooth. Once everything is well combined, gradually add the flour mixture to the wet ingredients.

Balls of cookie dough on baking mat.

Step 5. Finally, it is time to scoop the cookies on the baking sheet. I like to use a cookie scoop. It makes it go so much faster and you can get each cookie the same size.

Cookies on mat flattened before baking.

Step 6. Gently press down on each ball to flatten them slightly. You can do this with your hands or the bottom of a glass.

Step 7. Bake the cookies for 7-10 minutes.

Step 8. Let the cookies cool for 5 minutes on the baking sheet. Then transfer the cookies to a wire rack to cool completely.

Frosting ingredients combined in a bowl.

Step 9. While the cookie cool, make the filling. In a medium mixing bowl, cream together the butter and powdered sugar until fluffy. Add vanilla and salt. Then carefully stir in the marshmallow fluff. Allow to chill for 20 minutes.

Frosting piped on each cookie to make a sandwich.

Step 10. Place the filling into a piping bag fitted with a large round tip. Then pipe the filling onto the bottom of one cookie and top with second cookie to create a sandwich.

Expert Tips

  • Cookie Scoop – Use the small cookie scoop so that your cookies are the size of a tablespoon.  Flatten each cookie by gently pressing down on them.
  • Boxed Cake Mix – You can make use a boxed cake mix to make the whoopie pie cookies.
  • Prepared Baking Sheets – Line cookie mix with parchment paper before placing cookie dough on them. This prevents the cookies from sticking to the pan.
  • Cooling Rack – Allow the cookie to cool on the a cooling rack before adding the filling.
  • Mix Ingredients – Mix ingredients by hand or with a electric mixer.
  • Frosting the cookies – We recommend frosting the flat side of the cookies.

Storage

Store in airtight container in the refrigerator up to 3 days. When you are ready to serve, we like to take out of the fridge 30 minutes before serving. This allows the cookies to soften again.
