Ingredients

  • Pecans Halves. This size is easy to snack on.
  • Egg White. I use a large egg.
  • Vanilla Extract. Pure vanilla extract is recommended for the best flavor.
  • Brown Sugar. Try Homemade Brown Sugar Recipe.
  • Ground Cinnamon. If you like more or less cinnamon, feel free to adjust the measurements.
  • Non Stick Cooking Spray. Don’t skip this step or you will have a mess in the crockpot.

Variations

  • Nuts. Try using other types of nuts in this recipe. Some ideas include cashews, walnuts, peanuts and almonds.
  • Spicy. Change the flavor in this recipe and make sweet and spicy pecans. The extra heat and combination with the sweet is delicious.

    Just add ¼ teaspoon cayenne pepper to the brown sugar mixture. You can adjust this based on preference and how spicy you like it.
  • Salted Candied Pecans. While the candied nuts are cooking, sprinkle sea salt on top.

Step By Step Instructions

Step 1. In a large mixing bowl, whisk together the egg whites with the vanilla extract until frothy. This takes about 1 to 2 minutes.

Step 2. Then pour the egg white mixture into the pecans until evenly coated in the egg whites.

Step 3. Get out a separate large bowl. Stir together the sugar, brown sugar and ground cinnamon until combined.

Step 4. Pour this cinnamon and sugar mixture on top of the pecans.

Step 5. Toss so that the pecans are fully coated with the sugar mixture.

Step 6. Prepare the crock pot. Spray with cooking spray.

Step 7. Then add the pecan mixture to the crock pot.  Cover and cook on low for 3 hours. Stir every 30 minutes.

Step 8. Stir the water into the crock pot for the last 30 minutes of the cook time. This will help to make the outer shell crunchy.

Step 9. Continue to stir the pecans.

Step 10. Then spread the candied pecans out on a baking sheet lined with parchment paper. Allow them to cool for 20-30 minutes.

Serving Suggestions

  • Snacking. Candied Pecans are delicious served alone as a snack.
  • Charcuterie. Add candied nuts to a meat and cheese board. They compliment each other well.
  • Oatmeal and Cereal. These sweet and crunch pecans make a delightful topping for oatmeal and cereal. The cinnamon and sugar coating is so tasty.
  • Salad. If you like sweet and savory, add a spoonful of candied nuts to your salad. These are really good on spinach salad.

Store any leftover pecans in an airtight container at room temperature. I like to use a mason jar but any container with a tight-fitting lid will work.

How long can I store them?

The pecans can be stored up to 1 week.

Can you freeze Candied Pecans?

Yes, this is a great way to prolong the shelf life of candied pecans. Allow the nuts to cool completely and place inside a freezer container or bag.

They can be frozen up to 2 months.

Why are they soft?

Often this is a result of not allowing the nuts time to cool properly before storing. The moisture will form condensation in the container and soften the pecans.

This is an easy problem to prevent. Just allow enough time for the nuts to completely cool.

Pro Tips

  • Slow Cooker. I used a 6 quart crock pot for this recipe.  
  • Crockpot liners. Make clean up a breeze when you use crock pot liners. Just toss and go after cooking for less mess.
  • Allow to cool. The pecans need ample time to cool completely. Rushing or skipping this step can result in soft pecans that are not crunchy.
  • Prepare the baking sheet. I recommend lining the baking sheet with parchment paper before placing the pecans to cool. This will help to prevent sticking and also make clean up much easier.
