We love s’mores but sometimes it’s just not possible to make them the traditional way. Often weather and time do not allow for making s’mores over a fire.

What do you do when everyone wants s’mores with all of that delicious, melted chocolate, ooey marshmallows and toasted graham crackers? You make S’mores Cookie Cups for an easy oven baked dessert. I also have been making Golden Graham Smores Bars and S’mores Cones for years.

Why This Recipe Works

These miniature s’mores cups are the perfect size for little hands and so tasty. My kids love that they can eat a couple since they are mini. These are really so decadent and amazing.

Any type of dessert that has the ingredients for s’more is going to be a yummy treat.

Ingredients

Ingredients needed - graham cracker crumbs, powdered sugar, butter, mini marshmallows, chocolate bars.
  • Graham Cracker Crumbs. You can use graham cracker sheets to make the crumbs or buy them already crushed.
  • Butter. Always use real butter.
  • Mini Marshmallows. I recommend the small size instead of regular marshmallows.
  • Hershey’s Chocolate Bars. You can try other types of chocolate. Cookies and Cream, dark chocolate, chocolate with almond or anything you love.

Find the complete ingredients at the bottom of the page.

  • Step 1. Prepare the Oven – First, preheat oven to 350 degrees.
Bowl of crushed graham crackers, powdered sugar and melted butter.

Step 2. Combine the Crust Ingredients – In a small bowl, combine the graham cracker crumbs, powdered sugar, and melted butter.

Graham cracker crumbs in mini muffin tin.

Step 3. Prepare the muffin pan. Grease the mini muffin pan with non-stick cooking spray. Then pour the graham cracker crust mixture into the 24 cups. Carefully press the crumbs into the bottom of each cup.

Crust baked and topped with mini marshmallows.

Step 4. Bake the mini graham cracker crusts for about 4 minutes until golden brown. Then top with 2 to 3 marshmallows.

Chocolate placed on top of toasted marshmallows in each cup.

Step 5. Broil the Marshmallows for 1 to 2 minutes. Just until the marshmallows are soft and beginning to look toasted. They can burn quickly so don’t walk away. Then top with one piece of Chocolate Bar. Allow to cool then use a butter knife to lift them from the pan.

Storage

If you have leftover S’mores Cookie Cups, store them in an airtight container at room temperature. To reheat them, place them in a microwave safe plate and heat for about 10 seconds.

You can also freeze these cookies cups. Place leftover S’more cookies cups in a freezer safe container. They will stay fresh for up to 2 months.

Once you are ready to serve again, just set them out and let them reach room temperature.

Pro Tips

  • Use a Mini Muffin Pan – Make sure you have a mini muffin pan. This is the perfect size of pan make these delicious little s’mores cups.  This is the perfect size to serve for parties and more. My pan is Wilton and works great but just use what you prefer or already have.
  • Graham Cracker Crust – It is also helpful to use a food processor to get the graham crackers really fine. If you don’t have one, you can crush them in a ziploc bag.
  • Use a Rolling Pin – You can also crush the graham cracker sheets in a zip lock bag with a rolling pin. You can also use a stand mixer.
  • Watch the marshmallows closely. They don’t take long to toast and it’s very easy to burn them.
  • Regular marshmallows. If you don’t have mini, cut the regular marshmallows in half and again to make them smaller. We have even used homemade marshmallow fluff.
  • Remove from pan. To remove the graham cracker cookie cups from the pan, make sure they have cooled completely. Then gently take a butter knife around the edges of the graham cracker crust and lift up then remove from pan.

Can I Use Other Types of Chocolate?

Yes, you can. We used the traditional Hershey’s Milk Chocolate mini bars, but you can definitely use what you have. Here are some we recommend.

  • Mini Peanut Butter Cups
  • Hershey’s Kiss
  • Rollo’s
  • Dark Chocolate
  • Mini Snicker Bars
  • Hot Fudge Syrup or Caramel Syrup
  • Chocolate Chips

Could you make these with regular muffin cups?

    1. Carrie says:

I haven’t tried it before, but I think it would work great. I would put the ingredients for 2 of the mini ones in each of the regular size cups. Let us know how it turns out! Thanks.
