The combination of strawberry and lemonade cake mix forms the absolute best cookie recipe. It is even better with a gorgeous and delicious glaze drizzled on the top.

It is one of our favorite Spring Cookies while also being a Summertime favorite. The refreshing flavors of lemonade and strawberry make a delightful treat. This recipe is so easy with strawberry flavor and will be a hit for sure.

From start to finish, these cookies can be prepared and baked in about 30 minutes total. I also love to make Strawberry Lemonade Bundt Cake and Strawberry Lasagna.

Not only do they taste great but look so pretty. The pink and yellow color with the white glaze looks perfect for Spring or Summer.

This recipe for lemon sugar cookies is one you will want to make for parties and more. It is easy enough to make anytime.

Ingredients

Ingredients for Strawberry Lemonade Cookies - strawberry cake mix, lemon cake mix, eggs, lemon juice, powdered sugar, milk.
  • Strawberry Cake Mix. You can use any brand you love.
  • Lemon Cake Mix. The combination of this with the strawberry is amazing.
  • Eggs. I used large eggs.
  • Lemon Juice. Fresh lemon juice is best.
  • Powdered Sugar. Sift the powdered sugar to remove any lumps.

Glaze

  • Powdered Sugar and Milk. It is a simple combination but so delicious on the cookies once combined.

How to Make Strawberry Lemonade Cookies

Step 1. In a mixing bowl, whisk together the strawberry cake mix, eggs, vegetable oil and lemon juice. You can use an electric mixer if desired. I like my stand mixer.

Step 2. In a separate large mixing bowl, stir together the lemon cake mix, eggs, vegetable oil and lemon juice.  

  • Step 3. Allow the strawberry dough and lemon dough to chill in the refrigerator. It will take 20-30 minutes for the best texture.
  • Step 4. Preheat the oven. Set the oven to 350 degrees F.

Step 5. Form the cookies. Roll the lemon cookie dough into a ball. Follow the same process with the strawberry cookie dough. Then roll 1 lemon cookie dough ball with 1 strawberry cookie dough ball together to make one large ball. After rolling the dough, place the powdered sugar for the cookie in a shallow bowl. Roll the ball into the powdered sugar.

Step 6. Then place the batch on a cookie sheet.  Continue this process with the remaining dough.

Step 7. Bake the cookies for 10-13 minutes. Then let the cookies sit for 5 minutes on the baking sheet.

Step 8. Then move the cookies to wire racks to cool completely.  Drizzle glaze on top.

How to Make Glaze

  • Step 1. Combine ingredients. Make the glaze by whisking together the powdered sugar and milk.  Add more milk to thin the glaze if needed. 
  • Step 2. Drizzle the glaze. You can drizzle the glaze with a fork or piping bag onto the cookies once they have cooled.  Once the glaze has set, the cookies are ready to serve and enjoy! 

Pro Tips

  • Add ins. You can jazz these cookies up with white chocolate chips. Just add a handful to the dough and make as normal.
  • Cooling rack. Allow the cookies to cool before storing on a wire rack. They need to have time to set.
  • Cookie Scoop. We use this all the time to make forming the dough balls so easy. It also makes it go super fast and ensure they are all uniform.
  • Lemon Zest. Add even more lemon flavor to this recipe by adding lemon zest to the glaze.

Storage

Store the leftover cookies at room temperature in an airtight container up to 5 days.  Keep a piece of bread in the container with the cookies to keep them soft.  

How to Freeze?

This recipe is freezer friendly. You can freeze the dough or freeze the cookies once baked.

To freeze the cookies baked, they need to be completely cool. Then place in a freezer bag or container. I like to separate the layers with wax paper.

Freeze up to 3 months and thaw in the fridge when ready to enjoy.

Another option is to freeze the cookie dough. Flash freeze the cookie dough balls prior to baking for 1 to 2 hours. Then transfer the dough to a freezer container. When ready to enjoy, bake as normal.

Ingredients

  • For the Cookies:
  • 1 Strawberry Cake Mix 15.25 oz
  • 1 Lemon Cake Mix 15.25 oz
  • 4 Eggs divided
  • 2/3 cup Vegetable Oil divided
  • 2 teaspoons Lemon Juice divided
  • 1 cup Powdered Sugar
  • For the Drizzle
  • 1 cup Powdered Sugar
  • 1 Tablespoon Milk

Instructions

  • Gently roll 1 lemon cookie dough ball with 1 strawberry cookie dough ball together to make one large bowl. Place the powdered sugar for the cookie in a shallow bowl.
  • Roll the ball into the powdered sugar and place on a baking sheet. Continue this process with the remaining dough space the cookies approximately 2 inches apart on the baking sheets.
  • Bake for 10-13 minutes until the edges of the cookies are slightly golden brown. Let the cookies sit for 5 minutes on the baking sheet. Then move the cookies to wire racks to cool completely.
  • Make the glaze by whisking together the powdered sugar and milk. Add more milk to thin the glaze if needed. Drizzle the glaze with a fork or piping bag onto the cookies once they have cooled. Once the glaze has set, the cookies are ready to serve and enjoy!
