Ingredients

Ingredients needed - corn chex, rice chex, peanuts, pretzels, butter, brown sugar, corn syrup, baking soda, vanilla, salt
  • Chex Cereal. I used both Corn Chex and Rice Chex.
  • Honey Roasted Peanuts. The honey variety helps to give the perfect sweet and salty combination.
  • Tiny Pretzel Twists. You can use pretzel sticks if you prefer.
  • Unsalted Butter. Real butter is best.
  • Brown Sugar. The Best Brown Sugar Substitutes
  • Baking Soda. Best Baking Soda Substitutes
  • Vanilla Extract. Use pure vanilla extract for best results.

Variations

  • Chocolate Chips. Mini Chocolate Chips taste delicious in this recipe for another fun mix-in.
  • Pretzels. Instead of twists, you can use mini pretzels or any variation you prefer. You can even use a combination of types of pretzels.
  • Coconut. Shredded coconut is tasty in this cereal mixture. You can add 1 cup of shredded coconut.
  • Honey Grahams Cereal. Substitute a portion of the Chex cereal for Honey Grahams for a different taste and texture.
  • Nuts. Instead of honey-roasted peanuts, try plain peanuts, cashews, or sliced almonds.
  • Dried fruit. Cranberries or raisins make delicious add-ins.
  • Sprinkles. If you are making this for a holiday or birthday, add coordinating sprinkles to the cereal mixture. Red and green for Christmas, pastel for spring, and so forth.
  • M&M Candy. M&M’s taste and look great in this recipe. You can use regular or seasonal M&M’s for a fun new flavor twist. Reese’s pieces also taste great.

How to Make Sweet Chex Mix

  • Step 1. Preheat the oven. The oven needs to be preheated to 250 degrees Fahrenheit.

Step 2. Melt the butter in a small saucepan over medium high heat. 

Brown sugar whisked into butter.

Step 3. Then whisk in the brown sugar for several minutes stirring.

Mixture removed from heat and corn syrup and baking soda added.

Step 4. Remove the pan from heat. Stir in the corn syrup, baking soda, vanilla and salt.

Step 5. Get out a large mixing bowl. Stir together the corn Chex, rice Chex, peanuts and pretzels.

Step 6. Pour the syrup mixture over this cereal. Gently stir to coat it evenly with the syrup mixture.

Step 7. Spread the mixture on a large baking sheet. I suggest lining it with parchment paper.  Bake for 1 hour making sure that you stir every 15 minutes. Allow to cool and break into pieces.

Storage

Store in an airtight container at room temperature for up to 2 weeks. This snack mix stores easily and tastes great.

Ours never lasts that long though because everyone eats it so fast. It is so delicious.

How Long Will It Last?

The Chex Mix recipe sweet mixture will last up to 2 weeks as long as it is stored properly. You can easily make this in advance for parties or holidays.

It will still taste amazing and save you a little bit of prep work the day of the event. This is also a great way to make lunchbox snacks in advance for the family.

Expert Tips

  • Coat all pieces evenly. Make sure to evenly coat the cereal mixture so the sweet mixture is in every bite.
  • Line the baking pan. Clean up will be easier if you line the sheet pan in parchment paper or use a silicones baking mat. The mixture is very sticky until it sets.
  • Don’t add too many mix-ins to the recipe. Be careful with adding extra ingredients. Don’t add so much that you don’t have enough syrup to coat the mixture.
  • Be careful with the coating. It is sticky and hot when being poured on the cereal.
  • Bring to a boil. The mixture needs to come to a boil completely so that it is the proper consistency.

Instructions

  • Preheat the oven to 250 degrees Fahrenheit.
  • Melt the butter in a small saucepan over medium high heat.  Whisk in the brown sugar.
  • Whisk and bring the mixture to a low boil.
  • Remove from heat and stir in the corn syrup, baking soda, vanilla and salt.
  • In a large bowl, stir together the corn Chex, rice Chex, peanuts and pretzels.  Pour the syrup mixture over this mixture and gently stir to coat it evenly with the syrup mixture.
  • Spread the mixture onto a large baking sheet.  Bake for 1 hour (stirring every 15 minutes).
  • Let the Chex mix cool completely at room temperature.
  • Then it’s ready to break into pieces, serve and enjoy!
