Everything you love about classic sugar cookies is packed into these tasty cookies. They are so soft and fluffy while being incredibly simple to make. Let the kids help make these easy unicorn sugar cookies for lots of fun.

Ingredients

  • Butter. Softened at room temperature.
  • Granulated Sugar. Divided
  • Large Eggs. Room temperature.
  • All-purpose flour. Spoon the flour into a measuring cup instead of scooping it.
  • Vanilla Extract. Always use pure vanilla extract.
  • Pink, Blue, Purple and Green Gel Food Coloring. Gel food coloring is best.

Variations

  • Try different colors. You can use any colors you prefer in this recipe to match any theme.
  • Sprinkles. Add sprinkles to the cookies before baking. You can use any color you want.
  • Icing. Top the cookies with icing or sandwich two cookies between icing for a decadent treat.
  • Cookies. Instead of swirling the dough, you can make the cookies a solid color and top with colorful sprinkles. They will be pretty displayed together in an assortment of colors.

How to Make Unicorn Sugar Cookies

Step 1. While the oven is preheating, combine the dry ingredients. In a medium size mixing bowl, whisk together the flour, baking powder and salt.  Set aside.

Step 2. Next, get out a separate bowl and cream the butter with the granulated sugar. I used a hand held mixer or stand up mixer. The consistency should be smooth and creamy.

Step 3. Combine the eggs and vanilla extract.

Step 4. Mix until thoroughly combined and smooth.

Step 5. Mix together the wet and dry ingredients. Everything should be well combined.

Step 6. Divide the dough. Dye the dough. Add 3 drops of each food coloring to each bowl and mix well until they are each a vibrant color.

Step 7.  Place the remaining granulated sugar into a small, shallow bowl.  Shape the dough into one-inch sized balls with multiple colors. Then roll the balls into the granulated sugar.

Step 8. Place the cookies on the baking sheet. Bake for 10 minutes until the top of the cookies begin to crack.

Step 9. Allow the cookies to cool a few minutes. Then transfer to a wire rack to cool completely.

Pro Tips

  • Room temperature ingredients. The butter and eggs should be room temperature.
  • Do not overbake. If the cookies are overbaked, they will lose some of their vibrant colors and start to brown.
  • Gel food coloring. We suggest gel food coloring for the brightest and prettiest cookies.

Store the leftover cookies in an airtight container or ziplock bag at room temperature for up to 5 days.  Keep a slice of bread in the container with the cookies to keep them moist. 

How to freeze unicorn cookies?

There are two options for freezing these cookies. You can freeze the dough before cooking. This method is a great way to enjoy fresh baked cookies any day of the week.

Make the dough as instructed and form the balls. Place on a baking sheet and flash freeze for 1 to 2 hours. Then transfer to a freezer bag or container.
This will prevent the cookies from sticking to each other. You can bake them when ready. However, you may need to add a few extra minutes to the baking time if frozen.

The other option is to freeze the cookies after they are baked. Place the cookies inside a freezer container or bag. We recommend using parchment paper in between the cookies.

Instructions

  • Preheat the oven to 350 degrees F.
  • In a medium size mixing bowl, whisk together the flour, baking powder and salt.  Set aside.
  • In a medium bowl, cream together the butter with 1 ¼ cups of the granulated sugar with a hand held mixer or stand up mixer. .
  • Add in the eggs and vanilla extract. Mix until thoroughly combined and smooth.
  • Slowly add the dry ingredients into the wet ingredients on low speed.
  • Separate the dough evenly into 4 bowls.
  • Add 3 drops of each food coloring to each bowl and mix well until they are each a vibrant color.
  • Place the remaining granulated sugar into a small, shallow bowl.
  • Roll dough into one inch sized balls with multiple colors. Then roll the balls into the granulated sugar.
  • Place them onto a cookie sheet and bake for 10 minutes until the top of the cookies begin to crack.
  • Let the cookies sit for 5 minutes on the pan and then transfer them to a wire rack to cool completely. Enjoy!
