Ingredients

Ingredients for brownie cookies - flour, cocoa powder, semi-sweet chocolate,, butter, eggs, brown sugar, vanilla,.
  • All Purpose Flour. Spoon the flour into the measuring cup instead of scooping.
  • Unsweetened Cocoa Powder. Make sure that you are using unsweetened cocoa powder.
  • Semi-Sweet Chocolate. Coarsely chopped into pieces.
  • Butter. Softened at room temperature.
  • Large Eggs. Room temperature eggs are best.
  • Brown Sugar. Try this Homemade Brown Sugar Recipe.
  • Vanilla Extract. Use pure vanilla.
  • Semi-Sweet Chocolate Chips. Semi-sweet chocolate chips help to make the recipe not overly sweet.

Variations

  • You can use dark chocolate in this recipe. It is really tasty and one of my favorite variations.
  • Try adding espresso powder to the batter for a delicious combination with the chocolate.
  • Add a ½ cup nuts to the batter. Chopped walnuts or pecans are delicious in this recipe.
  • Top with flaky sea salt.
  • Peanut Butter Chips. Substitute peanut butter chips for the chocolate or combine both.

How to Make Brownie Cookies

  • Step 1. Preheat the oven to 350 degrees.

Step 2. Melt the chocolate. Use the microwave to melt the chocolate. Heat in 20 to 30 second intervals. Make sure to stir after each interval so it does not burn. Then allow to cool.

Step 3. Combine the dry ingredients. In a separate bowl, stir together the dry ingredients.

Step 4. Next, beat together the butter and both of the sugars together with a mixer.  Then add in the eggs and vanilla extract. Mix together.

Step 5. Pour in the cooled melted chocolate mixture. Then beat for 2 to 3 minutes until the chocolate is combined.

Step 6. Slowly add the dry ingredients into the butter mixture.  Then fold in the chocolate chips to the brownie batter.

Step 7. Form the dough into balls and place on the cookie sheet.

Step 8. Bake the cookies for 10 to 12 minutes. Be careful not to over bake.  The cookies will be soft but will harden as they sit.

Step 9. Let the cookies sit on the baking sheets for 5 minutes and then transfer them to a wire rack to cool completely.  

Serving Ideas

  • Make an ice cream sandwich. Place a scoop of ice cream between two cookies. I love to use No Churn Vanilla Ice Cream.
  • Crumble the cookies and sprinkle over ice cream.
  • Enjoy the cookies for the perfect snack or dessert.

Storage

Keep the cookies in an airtight container at room temperature for up to 1 week. 

Pro Tips

  • Use good quality chocolate. It really is the star of the recipe and will result in a better cookie. The cookies will taste so amazing with high quality chocolate.
  • Softened butter. Make sure the butter has been softened at room temperature. This will result in the perfect texture for these cookies. Don’t use melted butter but softened butter in the recipe.
  • Unsweetened cocoa powder. Use unsweetened cocoa powder in this recipe for best results.
  • Chill the dough. You can chill the dough before shaping into balls to make it easier to work with.
  • Don’t overbake the cookies. The center will be soft when taken out of the oven but continue to cook. You don’t need to increase the baking time.
  • Use a cookie scoop to shape the cookies. This will help to make each one uniform and cook evenly.
  • Make sure to use a prepared baking sheet. You can place parchment paper on the cookie sheets if you prefer.
  • Good quality ingredients. The better-quality ingredients, the better the cookies will turn out.
  • Make in advance. The dough can be made up to 3 days ahead of time. Cover the bowl of dough and refrigerate. When ready to make the cookies, allow it to sit on the counter for 10 to 15 minutes.

How to Freeze

There are 2 options. You can either freeze the dough or the cookies.

  • Freeze the dough.
  • Scoop the dough into balls and place on a baking sheet with parchment paper.
  • Freeze until the dough is frozen. This will take a couple of hours.
  • Once frozen, place the cookie dough balls inside a freezer bag or container.
  • When ready to enjoy, thaw overnight in the fridge. You can also bake them frozen but add a few extra minutes to the cooking time.
  • Freeze the cookies.
  • Cool the cookies completely once baked.
  • Place the cookies inside a freezer bag or container. I recommend placing parchment paper in between the layers.
  • Freeze the cookies. Allow to thaw overnight when ready to enjoy.

Instructions

  • Preheat the oven to 350 degrees F.
  • Melt the chocolate in the microwave. Heat in 20-30 second intervals, stirring after each interval until the chocolate is fully melted. Then set the chocolate aside to cool some so it doesn’t cook the eggs in the cookie batter.
  • In a separate bowl, stir together the dry ingredients: flour, chocolate powder, baking powder and salt.
  • Then in a large bowl, beat together the butter and both of the sugar together with a stand up mixer or a hand held mixer.  Then add in the eggs and vanilla extract. Mix these ingredients together on high speed until the mixture is smooth and creamy.  Scrape down the sides of the bowl.  Then pour in the cooled melted chocolate and beat for 2-3 minutes until the chocolate is combined.
  • Slow add the dry ingredients into the butter mixture.  Mix on a low speed slowly just until the ingredients are just combined.  Be careful to not over mix the ingredients.
  • Then fold in the chocolate chips.
  • Place the cookie dough onto the baking sheet in 1-2 Tablespoonfuls of the cookie dough.
  • Bake for 10-12 minutes until the edges of the cookies are set (be careful not to over bake).  The cookies will be soft but will harden as they sit.
  • Let the cookies sit on the baking sheets for 5 minutes and then transfer them to a wire rack to cool completely.
  • Then they are ready to serve and enjoy!
