How to Make Chocolate Caramel Ice Cream

Step 1. Mix the Heavy Cream and Powdered Sugar. In a large mixing bowl, use an electric mixer to whip the heavy cream and powdered sugar. It will take about five minutes until the cream forms stiff peaks.

Step 2. Next, mix in additional ingredients. Gently fold in the condensed milk, cocoa powder, and half of the caramel sauce. I like to use a large spoon or spatula. Gently fold the mixture until there aren’t any clumps.

Step 3. Spread the ice cream mixture into a loaf pan. Then drizzle the remaining caramel over the top of the ice cream. Freeze for at least 5 hours but I prefer overnight.

Step 4. Scoop and enjoy.

Expert Tips
- Scooping Ice Cream – Depending on the temperature of your freezer, you may need to let your ice cream sit on the counter for a few minutes before scooping it.
- Adding the Salt – The salt helps balance the sweetness from the condensed milk and caramel, so the ice cream isnโt overwhelmingly sweet.
- Ice Cream Bases – We love that this is a basic ice cream base. But you can easily add in chocolate chip or other types of syrup.
- Frozen Bowl โ Use a frozen bowl to mix together ingredients. I like to freeze my bowl for 24 hours prior to using. This will help the mixture to freeze even better.
- Quality Ingredients โ Try to use the best quality ingredients you can find. Since this recipe calls for so few ingredients, it is helpful to use high quality ones.
- Heavy Cream โ Do not substitute regular milk for the heavy whipping cream. It will not result in the same creamy texture.
- Mixing Ingredients โ When combining the chocolate mixture and the whipped cream, do not over mix. Stir until the ingredients are combined.
