How to make Walnut Chocolate Chip Cookies:
- Step 1. Preheat the oven. Preheat the oven to 350 degrees Fahrenheit.
- Step 2. Combine the butter and sugar. In a large bowl beat (with a stand up mixer or hand mixer), the unsalted butter, vegetable oil and both sugars. Mix on medium speed for 2-3 minutes until the mixture is creamy.
- Step 3. Add the eggs to the mixture. Scrape down the sides of the bowl and then add in the eggs and vanilla. Continue mixing until thoroughly combined.
- Step 4. Get out a separate mixing bowl. In a separate bowl, stir together the flour, cornstarch, baking soda and salt.
- Step 5. Combine the wet ingredients and dry ingredients. Then mix the bowl of dry ingredients into the wet ingredients. We recommend mixing this by hand so that the mixture does not get over mixed.
- Step 6. Fold in the chocolate chips and nuts. Next gently stir in the chocolate chips and chopped walnuts into the flour mixture. Do this step by hand and do not use an electric mixer.
- Step 7. Form the dough balls. Then drop the cookie dough onto parchment-lined baking sheets in approximately 1 tablespoon amounts.
- Step 8. Bake the cookies. Bake for 8-10 minutes until the edges of the cookies are slightly brown. Do not over bake. The cookies may look raw in the middle but they will continue to cook as they set.
- Step 9. Allow to cool. Cool on the baking sheet for 5 minutes. Then move the cookies to a wire rack to cool completely after bake time.
- Step 10. Serve and enjoy the cookies. Then the cookies are ready to serve and enjoy!
Storage:
Store the leftover cookies in an airtight container or ziplock bag at room temperature for up to 5 days. Keep a slice of bread in the container with the cookies to keep them moist.
Can you freeze these cookies?
Yes, you can freeze the cookies unbaked or baked. This recipe is very easy to freeze and you can enjoy freshly baked cookies any day of the week.
If you plan to freeze the cookies before being baked, it is important to flash freeze the dough balls. Place them on a baking sheet lined with parchment paper and freeze for 1 to 2 hours.
Then transfer the dough balls to a freezer bag or container. They won’t stick to each other because of flash freezing them. You can then bake the entire batch or just a couple of cookies.
Bake as normal but add a few extra minutes to the baking time if frozen.
If you are freezing baked cookies, allow to cool and place in a freezer container. Separate the cookies with parchment paper. Allow to thaw overnight in the fridge when ready to enjoy.
