Chipwich Ice Cream Sandwiches are so delicious and one of the best ice cream recipes. It is incredibly simple to make a homemade ice cream sandwich. You can use any ice cream flavor, but we used a scoop of Vanilla Ice Cream. Our family also loves Whoopie Pie Recipe.

It is one of the most decadent and delicious treats. Vanilla ice cream is sandwiched between chocolate chip cookies.

The entire thing is rolled in chocolate chips for even more chocolate goodness. If you have never tried one, you are going to love this chocolate chip cookie ice cream sandwich.

Yes, it is an ice cream cookie sandwich. This recipe uses fresh baked cookies for an absolute amazing dessert.

Ingredients

Ingredients for recipe: ice cream, flour, sugar, chocolate chips, egg, butter, vanilla.

For the Cookies

  • unsalted Butter. Softened at room temperature.
  • Granulated Sugar
  • Brown Sugar
  • vanilla Extract
  • All Purpose Flour
  • Baking Soda
  • Semi-Sweet Chocolate Chips

For the Sandwiches

  • Vanilla Ice Cream 
  • Mini Chocolate Chips. This is for rolling the sandwiches in.

How to make a chipwich

  • Step 1. First, preheat the oven to 350 degrees.
Brown sugar and butter mixed together in a bowl.

Step 2. While the oven is warming up, use a large mixing bowl or bowl of a stand mixer to cream together the butter and both types of sugar. Use medium speed for 2 to 3 minutes until the mixture is creamy. You can use a stand mixer fitted with attachments or a hand mixer.

Step 3. Next, scrape down the sides of the bowl and add in the eggs and vanilla.  Keep mixing until the mixture is well combined.

Step 4. You will need another bowl. Combine the flour, baking soda and salt.

Step 5. Next, add the bowl of dry ingredients into the wet ingredients.  This part is best mixed by hand so that the mixture does not get over mixed. You want to stir this until it is just combined.

Step 6. Then gently stir in the chocolate chips by hand.

Step 7. Finally, drop the cookie dough onto baking sheets 2 inches apart in approximately 1.5 tablespoon amounts. You can use a cookie scoop if you have one. Allow the cookies to bake for 10 to 12 minutes.

Step 8. After the cookies have finished baking, let them cool on the baking sheet for 5 minutes before moving. Then move the cookies to a wire rack to cool completely.

Step 9. Once cool, place the cookies in a freezer bag. Then put them in the freezer for 20 to 30 minutes.

Step 10. Take the cookies out to begin making the ice cream sandwiches. Start by taking one cookie and using an ice cream scoop to place the ice cream on the cookie.

Step 11. Then top the ice cream with the 2nd cookie.

Step 12. Once assembled, place the mini chocolate chips in a large wide mouth bowl.  Roll the edges of the sandwiches in an even layer of mini chocolate chips so that the chocolate chips stick to the ice cream.

FAQs

How to store ice cream sandwiches?

Wrap them individually in plastic wrap. Then place in a freezer bag or airtight container and freeze.
It makes it much easier to grab one to eat when they are wrapped separately.

How long will an ice cream sandwich last?

If stored properly, they can be frozen for up to 2 to 3 months. 

Expert Tips

  • Freezer. It is important to allow the cookies ample time in the freezer before assembling each chipwich.

    This step prevents the cookies from crumbling and helps them to hold their shape. This step is crucial in this recipe as warm cookies will not work to make these.
  • Ice Cream. Make sure to use good quality ice cream. Since the ice cream is the star of the show, you need to use a good quality. It will make a big difference in the final product.
  • Wrap in parchment paper. I like to also wrap each ice cream sandwich in parchment paper. It helps them stay really fresh.

  • Then take one cookie and place a scoop of the ice cream on the cookies then top the ice cream with the 2nd cookie.
  • Place the mini chocolate chips in a large wide mouth bowl.  Immediately roll the edges of the sandwiches in the mini chocolate chips so that they chocolate chips stick to the ice cream.
  • Serve immediately or wrap them individually in plastic wrap, place in a freezer bag and freeze for up to 2-3 months.
