How Are Ice Cream Rolls Made?
Traditionally, it is spread on a really cold metal surface. Then the mixture of simple ingredients are scraped into rolls.
You might hear this referred to as Thai rolled ice cream or stir-fried ice cream.

Base
- Heavy cream: Keep it very cold straight from the fridge for the best texture and to help it freeze properly on the cold plate.
- Sweetened condensed milk: Do not substitute with regular milk—this ingredient provides both the sweetness and creamy, smooth texture that rolled ice cream needs.

How To Make Ice Cream Rolls

Step 1. First, whisk together the heavy cream, sweetened condensed milk and salt in a large bowl.

Step 2. Combine until well blended.

Step 3. Next, pour the ice cream mixture into 2 sheet pans. The pans should be a rimmed baking sheet pan. If you are using toppings, add the sprinkles or preferred topping now. Then put the sheet pans in the freezer on a flat surface for 2 to 4 hours.

Step 4. Next, put the ice cream chilled bowl and the ice cream scraper in the freezer. Start rolling the ice cream layer in an angle. Use the spatula to scrape the mixture up and roll it into strips as you scrape. Once it is rolled up, gently place the finished roll of ice cream rolls into the ramekins or small cup from the freezer.

Ingredients
- FOR THE ICE CREAM:
- 2 cups cold Heavy Cream
- 1 can sweetened Condensed Milk 14 oz.
- ½ tsp Salt
- OPTIONAL TOPPINGS:
- Sprinkles
- Crushed Cookies
- Crushed Candy
- Caramel
- Chocolate Chips
- Crushed Pretzels
- Fresh Fruit

Instructions
- Whisk together the heavy cream, sweetened condensed milk and salt in a large bowl.
- Pour the mixture into 2 sheet pans, rimmed baking sheets or 2 9X13 baking pans.
- Add in the toppings of your choice. Sprinkle the toppings onto the top of the cream mixture in a sheet pan and use a spatula to even mix them through the cream mixture.
- Place the sheet pans on a flat surface in the freeze for 2-4 hours until completely frozen.
- Place the bowls that you are going to serve the ice cream in and the ice cream scraper that you will use to roll in the ice cream in the freezer for 15-30 minutes prior to rolling the ice cream so they do not melt the ice cream.
- Then it’s time to roll the ice cream. Roll 1 pan at a time. Place the pan with the longer side closer to you. Then work quickly from the top to the bottom. Use a sharp edge spatula to cut the ice cream into 3 inch wide strips. Then start at the bottom and use the spatula to scrape the ice cream up and roll the ice cream strips into rolls. Then gently place the rolled ice cream into the serving bowls (from the freeze).
- Top with your favorite ice cream toppings (whipped cream, berries, chocolate syrup, etc) and then serve!
