My kids go crazy over rolled ice cream but it is pricey at the local ice cream shop. I have been making this at home for the absolute best treat. You will be shocked just how easy this ice cream recipe is to make.

How are ice cream rolls made?
Traditionally, it is spread on a really cold metal surface. Then the mixture is scraped into rolls.
You might hear this referred to as Thai rolled ice cream or stir-fried ice cream.
We have an easy way to make this at home using a sheet pan. Keep reading to see how easy this is to make.
Ingredients
For the Base
- Heavy Cream. This needs to be cold.
- Sweetened Condensed Milk. Don’t substitute for regular whole milk as this gives the recipe sweetness and creaminess.

Toppings
- Sprinkles. Rainbow sprinkles look pretty. You can also use seasonal sprinkles to celebrate Valentine’s Day, Christmas and more.
- Crushed Cookies. Oreo cookies, chocolate chip and sugar cookies are great options.
- Crushed Candy Bars. Use leftover candy to make delicious ice cream.

- Chocolate Chips. Try milk chocolate, dark chocolate or white chocolate.

How to Make Ice Cream Rolls
Step 1. First, whisk together the heavy cream, sweetened condensed milk and salt in a large bowl.
Step 2. Combine until well blended.
Step 3. Next, pour the ice cream mixture into 2 sheet pans. These should be rimmed baking sheets pans. If you are using toppings, add the sprinkles or preferred topping now. Then put the sheet pans in the freezer on a flat surface for 2 to 4 hours.
Step 4. Next, put the ice cream chilled bowl and the ice cream scraper in the freezer. Start rolling the ice cream in an angle. Use the spatula to scrape the mixture up and roll it into strips as you scrape. Once it is rolled up, gently place the thin layer of ice cream rolls into the ramekins or small cup from the freezer.
Rolled Ice Cream Flavors
- Cookies and Cream. Add crushed oreo cookies to the ice cream base before freezing.
- Peach ice cream. Dice fresh peaches and toss into the base.
- Fudge Stripe. Drizzle chocolate syrup all over and freeze.
- Birthday. Top with sprinkles all over. This is a kid favorite around here.
- Mint. Add chopped Andes mints to the base.
- Nutella. Swirl a spoonful of Nutella into the base. This is so creamy and delicious.
- Peanut Butter. You can add peanut butter sauce or just use peanut butter. Swirl it around the base before freezing.
The possibilities are endless for flavors. The base is so easy and you can easily add anything you like for lots of flavors.
Expert Tips
- Work fast. Make sure to roll the the cream mixture as soon as you bring it out of the freezer. It will be more difficult to roll if it thaws and really hard to work with.
- Chilled bowls. It is important to place the rolls into bowls straight from the freezer. This will help to keep their shape intact and prevent them from thawing.
- Mix the add-ins. If you are making a flavor and using add ins, make sure to stir it well together before freezing. You want all of those yummy ingredients in each bite.
- Freeze flat. Make sure the sheet pan is flat in the freezer. This will ensure the mixture is even. This is important for rolling.
- Spatula. If you can’t find a flat edged metal spatula, you can use a paint scraper or putty knife to make the rolls.
- The mixture should be completely frozen. Don’t rush this step. It needs to be frozen before attempting to roll.
How to store
Place inside an airtight container in the freezer. It will keep up to 3 months if stored properly.

Rolled Ice Cream Recipe
Ingredients
- FOR THE ICE CREAM:
- 2 cups cold Heavy Cream
- 1 can sweetened Condensed Milk 14 oz.
- ½ tsp Salt
- OPTIONAL TOPPINGS:
- Sprinkles
- Crushed Cookies
- Crushed Candy
- Caramel
- Chocolate Chips
- Crushed Pretzels
- Fresh Fruit
Instructions
- Whisk together the heavy cream, sweetened condensed milk and salt in a large bowl.
- Pour the mixture into 2 sheet pans, rimmed baking sheets or 2 9X13 baking pans.
- Add in the toppings of your choice. Sprinkle the toppings onto the top of the cream mixture in a sheet pan and use a spatula to even mix them through the cream mixture.
- Place the sheet pans on a flat surface in the freeze for 2-4 hours until completely frozen.
- Place the bowls that you are going to serve the ice cream in and the ice cream scraper that you will use to roll in the ice cream in the freezer for 15-30 minutes prior to rolling the ice cream so they do not melt the ice cream.
- Then it’s time to roll the ice cream. Roll 1 pan at a time. Place the pan with the longer side closer to you. Then work quickly from the top to the bottom. Use a sharp edge spatula to cut the ice cream into 3 inch wide strips. Then start at the bottom and use the spatula to scrape the ice cream up and roll the ice cream strips into rolls. Then gently place the rolled ice cream into the serving bowls (from the freeze).
- Top with your favorite ice cream toppings (whipped cream, berries, chocolate syrup, etc) and then serve!
