Today, we are jazzing up plain Rice Krispie Treats with this Neapolitan Rice Krispie Treats version. They are so pretty and just a blast to make with this fun twist.

Rice krispie treats are one of my favorite no bake desserts recipes and so incredibly simple to make. My kids love these and you can save a ton by making these at home.

Those store-bought pre-packaged treats add up and it is very inexpensive and easy to make your own. We love to make Cake Batter Rice Krispie Treats, Chocolate Peanut Butter Rice Krispie Treats and Red Velvet Rice Krispie Treats.

Why We Love This Recipe

This is such a fun recipe and the vanilla layer, chocolate layer and strawberry layer all make such a cool treat. Neapolitan ice cream fans will really love this treat. 

It is such a classic dessert and snack. You will not believe just how easy it is. With just a few very simple ingredients, you can make these at home. 

Ingredients

  • Rice Krispies Cereal. Make sure to use fresh rice cereal.
  • Cocoa Krispies. This is what gives the recipe the chocolate layer.
  • Salted Butter. Always use real butter and not margarine.
  • Miniature Marshmallows. I like miniature marshmallows because they are easier to melt.
  • Box of Powdered Strawberry Jell-O. Store brand is fine.

Variation

  • Add sprinkles to the top- holiday, birthday or anything you like.
  • You can try using different colored marshmallows to jazz things up. We have used Strawberry Marshmallows for a yummy option.
  • Add chocolate chips to the mixture.
  • Try peanut butter morsels.
  • Drizzle chocolate on top. 
  • Use food coloring to make a different color layer.

How to Make Neapolitan Rice Krispie Treats

Keep in mind that you will be making 3 batches of Rice Krispies to get each flavor.

  • Step 1. Prepare Pan – Start by coating an 8 x 11.5 baking pan with non stick cooking spray or butter very thoroughly. 
  • Step 2. Melt Butter and Marshmallows – Next, melt 3 tablespoons of butter in a large saucepan at medium low heat. Add cups marshmallows and stir constantly until melted.
  • Step 3. Add in Rice Krispies Cereal – Remove from heat. Add 6 cups Rice Krispies cereal to the marshmallow mixture and stir until all the cereal is coated.

Step 4. Press into greased pan – Add the mixture into your greased baking dish and use a piece of wax paper to press the cereal mixture down firmly.

Step 5. Prepare pan for second layer. Melt butter and marshmallows. Remove from heat and mix in cocoa krispie cereal. Stir until all the cereal is coated. Place the mixture on top of the vanilla layer.

  • Step 6. Prepare Strawberry Layer. Melt the butter and add mini marshmallows. Stir constantly until melted. Remove from heat and add in Strawberry Jello and cereal. Pour the mixture on top of your chocolate layer. Allow to set and then cut into smaller squares.

Storage

Rice Krispie Treats are best stored at room temperature so that they remain gooey and delicious. We do not recommend placing them in the refrigerator.

Can You Freeze them?

We do not recommend freezing these treats. They are best served fresh.

Pro Tips

  • Use fresh marshmallows. They melt better and the texture will be much better than stale marshmallows.
  • Mix until just combined. Combine the melted butter, marshmallows, and cereal until just combined. Do not overmix or the cereal will break into pieces.
  • Gently press the mixture into the pan. Don’t press the mixture too hard into the baking dish. It will make the treats hard. Gently press into the pan.
  • Use wax paper or parchment paper to prevent sticking. Each layer is easier to press down if you use wax paper.
  • Allow to set before cutting. It’s important to let the rice krispie treats set before cutting or they will fall apart.

  • 12 cups miniature marshmallows
  • 3 ounce box of powdered Strawberry Jell-O

  • Lightly coat an 8×11.5-inch baking pan with nonstick cooking spray or butter. Set aside.
  • Make the vanilla layer first. Melt 3 tablespoons salted butter in a large saucepan over low heat.
  • Add 4 cups miniature marshmallows and stir constantly until completely melted and smooth. Remove the saucepan from the heat.
  • Add 6 cups Rice Krispies cereal and gently stir until all the cereal is evenly coated with the marshmallow mixture.
  • Transfer the mixture to the prepared baking pan. Lightly coat a piece of wax paper with nonstick spray and use it to firmly press the mixture into an even layer.
  • Wash and dry the saucepan before making the chocolate layer.
  • For the chocolate layer, melt 3 tablespoons salted butter in the saucepan over low heat. Add 4 cups miniature marshmallows and stir constantly until completely melted. Remove from the heat.
  • Add 6 cups Cocoa Krispies cereal and gently stir until all the cereal is evenly coated.
  • Carefully spread the chocolate mixture over the vanilla layer. Use lightly greased wax paper to press it down firmly and evenly.
  • Wash and dry the saucepan before making the strawberry layer.
  • Melt the remaining 3 tablespoons salted butter over low heat. Add the remaining 4 cups miniature marshmallows and stir constantly until melted and smooth.
  • Remove from the heat and stir in 1 (3-ounce) box strawberry Jell-O until completely dissolved and evenly incorporated.
  • Add the remaining 6 cups Rice Krispies cereal and gently stir until all the cereal is coated with the strawberry marshmallow mixture.
  • Carefully spread the strawberry mixture over the chocolate layer. Use lightly greased wax paper to press it into an even layer.
  • Allow the treats to cool completely before cutting into 9 servings and serving.

    1. Does the jello package make the dessert too sweet?
    2. Do the treats in your pic have the food color added or just the jello. They are a pretty color.

      Resi – The jello package does make the dessert a bit sweet but I don’t think it’s too sweet. I love the flavor that it adds and I did not add any food coloring to these rice krispie treats. I hope you try them out and enjoy them!
