These ooey gooey rice crispy treats take just minutes to make for the best dessert. They are so yummy and packed with marshmallows. These cereal treats are so fun for birthday desserts or any occasion.

Ingredients

Ingredients for Cake batter rice krispie treats - rice krispie cereal, butter, mini marshmallows, dry cake mix, sprinkles.
  • Rice Krispie Cereal. Make sure it is fresh and not stale or the bars will be hard.
  • Butter. Always use real butter.
  • Mini Marshmallows. I prefer to use miniature marshmallows because they are easier to melt quickly.
  • Dry Cake Mix. You can use Funfetti cake mix, yellow cake mix or white cake mix.
  • Rainbow Sprinkles. The sprinkles elevate the recipe and make it so festive.

Variations

  • Sprinkles. Try substituting the rainbow sprinkles for another color. This recipe can easily be made for various seasons and occasions. It is super easy and versatile.
  • Chocolate. Dip a portion of the bars into melted white chocolate. You can also use milk chocolate if you prefer.

Step By Step Instructions

  • Step 1. Prepare the pan. Spray a 9X13 baking pan with non-stick cooking spray. 
Butter and marshmallows melted together.

Step 2. Melt the butter and marshmallows on low heat. Place the butter and marshmallows in a large microwave safe bowl.  Heat in 30 second intervals until melted. Make sure to stir between each interval.

Step 3. Add the dry cake mix and stir until combined.

Step 4. Fold in the cereal and half of the rainbow sprinkles.  

Mixture spread into pan.

Step 5. Press the mixture gently into the 9X13 baking pan.  I spray a piece of parchment paper with non-stick cooking spray and use this to press the mixture into the pan.

Step 6. Finally, sprinkle the remaining sprinkles on top of the marshmallow mixture. Carefully, press them down into the top of the Rice Krispie treats.

Step 7. Next, just allow the treats to set at room temperature for at least 30 minutes.  Then slice, serve and enjoy! 

Storage

Do not store these treats in the refrigerator. They are best left to cool at room temperature so that they remain gooey and delicious.

Cover the leftovers and store at room temperature for up to 1 week.  

Expert Tips

  • Spray your hands in nonstick cooking spray. Then press the mixture down into the baking dish.
  • Allow the treats to cool and set before cutting.
  • Press the sprinkles on top before they set. This will ensure they adhere to the top without falling off.
  • This recipe calls for dry cake mix and not the batter.
  • Stir the mixture gently to prevent the the sprinkles from bleeding their color.

How to Prevent Rice Krispies From Hardening?

  • Do not over mix the ingredients. Stir until just combined. Stirring excessively will result in hardened treats.
  • Lightly press the mixture into the baking dish. Pressing too firmly can result in the final product being hard.
  • Store them inside an airtight container so they stay soft and gooey. If the container is not air tight, they will become hard.
  • Use precise measurements for best results. If you add too little butter, they can be hard.
  • Heat the marshmallow and butter mixture in intervals. This will prevent it from burning.

  • 3 Tbsp Butter
  • 1 bag Mini Marshmallows 10 oz bag
  • 1/2 cup Dry Cake Mix confetti, yellow or white
  • 1/2 cup Rainbow Sprinkles divided

  • Spray a 9X13 baking pan with non-stick cooking spray.

  • Then carefully mix in the cereal and half of the rainbow sprinkles.
