Ingredients

Ingredients for Red velvet rice krispie treats - rice krispie cereal, mini marshmallows, butter, vanilla, dry red velvet cake mix, white chocolate chips.
  • Rice Krispie Cereal. Make sure the cereal is fresh.
  • Mini Marshmallows. You can also use large marshmallows, but I prefer the mini size.
  • Butter. Use real unsalted butter for the best flavor.
  • Vanilla Extract. Pure vanilla is best.
  • Dry Red Velvet Cake Mix. You only need the dry mix and not any of the other ingredients.
  • White Chocolate Chips. Use the best quality chocolate chips you can.

Variations

  • Heart Shapes. Cut the rice krispy treats into heart shapes for an adorable Valentine’s Day treat.
  • Christmas. Enjoy these at Christmas and use green food coloring in the white chocolate. This will be so festive.
  • Sprinkles. Before the drizzle sets, add sprinkles on top. You can use any type of sprinkles you like for any occasion.
  • Chocolate coating. Instead of a chocolate drizzle, dip a portion of each rice krispy treat into white or milk chocolate. You can also pipe chocolate. Then top with sprinkles. You can also use candy melts.
  • Cereal. Switch the cereal up and use Cocoa Pebbles for extra chocolate flavor taste.
  • Frosting. Use a piping bag to add Homemade Cream Cheese Frosting Recipe to the rice krispies.

How to Make Red Velvet Rice Krispie Treats

  • Step 1. Prepare the pan. Line a 9X13 baking pan with parchment paper.

Step 2. Get out a large microwave-safe bowl. Place the butter and marshmallows in the bowl.

Step 3. Heat in 30 second increments, stirring after each interval until you melt butter and marshmallow mixture.

Step 4. Then add the cake mix, cocoa powder and vanilla extract.

Step 5. Stir until combined.

Step 6. Mix in the cereal.

Step 7. Gently fold in the crispy rice cereal until the cereal is coated with the marshmallow mixture.

Step 8. Spread into prepared pan. Then pour the mixture into a 9X13 inch baking pan. Spray a piece of parchment paper with a non-stick cooking spray and use that parchment paper to press the mixture down into the pan.

Step 10. Melt the topping. Melt the white chocolate chips in the microwave. Heat in 20 second intervals until it’s fully melted and smooth.

Step 11. Finally, drizzle the melted white chocolate over the top of the Rice Krispie treats.  Allow to set and then cut into rectangles. Serve on trays.

Storage

Store at room temperature for up to 1 week. Do not store in the refrigerator as the Rice Krispie treats will dry out.

Since the bars are sticky, place a layers of wax paper in between them. This will prevent them from sticking to each other. Wrap in foil or place in a zip top baggie. You can also just place inside an airtight container.

Can you freeze rice krispie treats?

Yes, this recipe is freezer friendly. Wrap individual bars with plastic wrap tightly. I usually double wrap each one so they are air tight. This will help to ensure freshness.

Place the wrapped bars inside a freezer bag or container. Either is fine just make sure it is air tight.

Freeze up to 4 months and enjoy. Since they are individually frozen, it is easy to grab one anytime the craving strikes.

Pro Tips

  • Don’t pack the mixture too firmly into the pan or it will make them hard. Just press them gently as you spread the mixture for best results.
  • Melt the butter and marshmallows in intervals when using the microwave. This will reduce the chance of burning the mixture.
  • Follow the instructions and do not add extra ingredients. While tempting to add extra marshmallows, it can result in too soft bars that fall apart. Adding too much cereal can result in hard bars.

Instructions
