Substitutions and Additions

How to Make Nutella Stuffed Cookies

Step 1. Brown the butter. Melt the butter in a saucepan over low heat. Once melted, bring the butter to a low boil. Watch the butter closely, stirring frequently, until the butter becomes an amber color. Then pour the mixture in a large heatproof bowl and set aside for the butter to cool for 25-30 minutes.

Step 2. Prepare the Nutella. Line a baking sheet with wax paper. Then drop 24 scoops of Nutella onto the baking sheet. Freeze for at least 20 minutes.

Step 3. Make the cookie dough. Stir the sugars into the cooled browned butter with a wooden spoon until combined.

Step 4. Then add in the eggs, vanilla extract, baking powder, baking soda, cornstarch and salt.

Step 5. Then gradually stir in the flour.

Step 6. Stir until just combined. Be careful not to over mix.

Step 7. Gently fold in the chocolate. Do not use a stand mixer or hand mixer for this step. Chill the cookie dough for 15-20 minutes.

Step 8. Form the dough into balls. I like to use a cookie scoop to make them all the same size. Then gently make a well into each of the cookie dough balls.

Step 9. Place a frozen piece of the Nutella into the cookie dough.

Step 10. Form the dough around the Nutella.

Step 11. Bake the cookies on a lined baking sheet for 8-10 minutes. Allow the cookies to sit on the baking sheets for 5 minutes.

Step 12. Then move the cookies to cooling racks to cool completely.
Storage
Store the leftover cookies in an airtight container for up to 1 week. Store a piece of bread in the container with the cookies to keep them soft.
How to Freeze
These delicious cookies can actually be frozen so you can enjoy them anytime the craving hits. There are 2 options.
You can freeze the cookies after baked. Just place the cookies into a freezer safe container or bag. I recommend placing wax paper in between the cookies to keep them from sticking.
They can be frozen and taken out to enjoy when you want a sweet treat. It is easiest to allow them to thaw overnight in the refrigerator.
The second option involves freezing the dough. Form the cookies as normal but do not bake them. Flash freeze the cookies by placing on a baking sheet and freezing for 1 to 2 hours.
Then transfer the cookies to a freezer container. The dough can be frozen up to 3 months and then baked as normal. You will need to add a couple extra minutes to the baking time if frozen.

Expert Tips
- Freeze the Nutella. This is the key to making the cookies turn out so perfect. It will be far too soft if the Nutella isn’t frozen prior to being baked. Also, do this step before making the cookie dough so you won’t have to wait.
- Allow the cookies to set. The cookies will be very fragile once baked. Allow them to sit for 5 minutes on the baking sheet and then move to a cooling rack. This will help the cookies hold their shape.
- Work fast. The nutella will become warm the more it is handled. Work fast to stuff the cookies and prepare them to be baked.
- Don’t overmix the dough. Combine until the ingredients are mixed together. Don’t continue to stir or the texture of the cookies won’t be the same.
