  • Rice Krispie Cereal. The cereal needs to be fresh or it will alter the final product.
  • Mini Marshmallows. The smaller size of marshmallows melts easier but you can use large marshmallows if you prefer.
  • Brown Sugar. You can make Homemade Brown Sugar Recipe.
  • Sea Salt. Don’t skip this ingredient. It adds the perfect balance of sweet and salty.

Variation ideas

  • Add caramel pieces or chocolate chips into the mixture. This would be so decadent and amazing.
  • Drizzle Homemade Caramel Sauce Recipe over the bars. You could even drizzle chocolate AND caramel for a delicious combination. It would be delicious with another caramel layer.
  • You can use a different size pan if you prefer thinner squares. This recipe would also work using a 9×13 baking dish.

    If you need to make more squares, this is a good size for parties. They are just thinner but still taste amazing.

How to make caramel rice krispie treats

Step 1. First, use a medium saucepan and heat the butter over medium high heat. Next, whisk in the brown sugar and corn syrup into the melted butter over medium heat. Let this heat for 5 to 7 minutes while stirring constantly.

Step 2. Then, reduce the heat to low. Add the sea salt and the mini marshmallows and stir constantly until melted.

Step 3. Get out a large mixing bowl. Pour the Rice Krispie cereal in the bowl. Then pour the marshmallow mixture all over the top. Stir until everything is mixed together.

Step 4. Get out an 8X8 baking pan and spray with cooking spray. Place the rice crispy mixture into the pan and press down. Allow to set for about an hour and then cut.

Pro Tips

  • Make sure to use a wooden spoon or plastic sturdy spoon when mixing the Rice Krispie cereal with the marshmallow mixture. It will help make stirring the mixture easier since it is so thick.
  • Do not refrigerate these as this will cause the bars to dry out and they won’t be gooey. They will be much firmer and lose the ooey-gooey element.
  • Use either a spatula or parchment paper sprayed with cooking spray to help press the mixture down. It really does help. You can use your hands but I find these options work the best.
  • Make sure you use a pot large enough to hold all of the ingredients. The marshmallows really expand so keep that in mind. Otherwise, the mixture will overflow and be very messy.

It can be tricky to cut these because of the caramel and how gooey they are. I usually try to lift the entire thing of rice krispies out of the pan and place on a cutting board.

Then just cut them into squares. It is helpful to spray the knife with cooking spray or butter it. Either option will make cutting them into bars less messy.

How to store?

Store the rice krispie treats inside an airtight container. I like to put waxed paper in between the layers so they don’t stick to each other.

Leave the container on the counter at room temperature. This will ensure they stay gooey and soft.

Can you freeze caramel rice krispie treats?

You can freeze these treats up to 3 months. Just allow them to completely cool and then store inside an airtight container or freezer bag.

I prefer to go ahead and cut them into bars. Just make sure to use parchment paper in between them. This will make it easy if you only want to grab a couple of bars from the freezer.

Sometimes you just want something sweet and these are easy to grab when you have some stored in the freezer.

Instructions

  • Heat the butter in a medium sauce pan over medium high heat.
  • Then whisk in the brown sugar and corn syrup. Heat for 5-7 minutes stirring constantly until the brown sugar is dissolved and the mixture is thick.
  • Reduce the heat to low, stir in the sea salt and the mini marshmallows. Stir constantly until the marshmallows are melted (2-3 minutes).
  • Place the Rice Krispie cereal in a large bowl. Pour the marshmallow mixture over the top. Sitr until well coated.
  • Spray an 8X8 baking pan with no stick cooking spray. Press the rice krispie mixture into the pan. Use a parchment paper spray with non-sticking cooking spray to press the mixture into the pan.
  • Let set at room temperature for at least 1 hour.
  • Then cut into squares and enjoy!
