Ingredients

  • Pure Maple Syrup. This is key to the fudge’s flavor. Make sure to use pure maple syrup.
  • Heavy Cream. I don’t recommend substituting as the heavy cream is needed to create the rich fudge texture.
  • Unsalted Butter. Real butter is best!

Step By Step Instructions

  • Step 1. Prepare the baking dish by lining with foil or parchment paper. Then spray with cooking spray so it’s easy to remove the fudge.

Step 2. Next, add the maple syrup to a saucepan. Heat over medium heat. Then bring the syrup to a boil and reduce the heat to low. Simmer for 5 minutes.

Step 3. Carefully pour in the heavy cream. Do not stir it in. Bring the mixture back to a boil. Then reduce to medium low heat and let simmer for 15-20 minutes. The mixture needs to reach 236 degrees F with a candy thermometer.

Step 4. Once the mixture has reached the correct temperature, remove the pan from the heat. Then add in the butter.

Step 5. Do not stir the butter as it is melting. Allow the mixture to cool for about 10 minutes.

Step 6. Once cool, beat the mixture with an electric mixer for 5 minutes. The mixture should be thick and thoroughly combined.

Step 7. Next, pour the mixture into the prepared square pan into a single layer using a spoon.  Gently tap the pan on the countertop to remove any air bubbles from the mixture.

Step 8. Cover the fudge in plastic wrap. The fudge needs to be refrigerated until fully set. It should take about 2-3 hours. Then carefully remove the fudge from the pan by lifting the parchment paper or foil. Cut the fudge into 24 pieces with a large, sharp knife.

Step 9. Then the fudge is ready to serve and enjoy! 

Storage

Place leftovers inside an airtight container. Store at room temperature up to 1-2 weeks. For extended store, place in the refrigerator up to 2-3 weeks. 

Can You Freeze Fudge? Yes, you can freeze the fudge up to 2 months. Place in a freezer container. Thaw in the fridge when ready to serve.

Mix In Suggestions

Try adding some of these into the fudge.

  • Mini Marshmallows. Adds a new flavor to the fudge and it’s really delicious.
  • Sea Salt. Sprinkle flaky salt on top of the fudge before it sets.
  • Mini Chocolate Chips. Sprinkle on top or mix into the fudge. Milk chocolate or white chocolate chips taste great.
  • Nuts. Chopped walnuts taste great in this recipe. Maple Fudge with walnuts nuts is called Vermont Fudge or Maple Walnut Fudge. You can also use pecans.
  • Coconut. Try adding coconut to the mixture or on top.

  • Real Maple Syrup is best. Make sure to use pure, real maple syrup and not artificial pancake syrup for the best flavor on this fudge. 
  • Use a candy thermometer. You need this to ensure the fudge mixture reaches the correct temperature. The fudge will not set if it is not the correct temperature.
  • Don’t stir. There are several times in the recipe it calls for adding ingredients but not stirring. It’s important to follow the recipe precisely.
  • Dark Syrup. Dark robust maple syrup has the most intense flavor.
  • Maple Extract. You can add a few drops of maple extract for added flavor, but you shouldn’t need it.
  • Nut Butter. Swap the butter for the nut butter of your choice.

  • Refrigerate until the fudge is fully set (2-3 hours).
  • Carefully remove the fudge from the pan by lifting the parchment paper or foil.
  • Dice the fudge into 24 pieces with a large, sharp knife.
  • Then the fudge is ready to serve and enjoy!
