- Step 1. Prepare the baking dish by lining with foil or parchment paper. Then spray with cooking spray so it’s easy to remove the fudge.
Step 2. Next, add the maple syrup to a saucepan. Heat over medium heat. Then bring the syrup to a boil and reduce the heat to low. Simmer for 5 minutes.
Step 3. Carefully pour in the heavy cream. Do not stir it in. Bring the mixture back to a boil. Then reduce to medium low heat and let simmer for 15-20 minutes. The mixture needs to reach 236 degrees F with a candy thermometer.
Step 4. Once the mixture has reached the correct temperature, remove the pan from the heat. Then add in the butter.
Step 5. Do not stir the butter as it is melting. Allow the mixture to cool for about 10 minutes.
Step 6. Once cool, beat the mixture with an electric mixer for 5 minutes. The mixture should be thick and thoroughly combined.
Step 7. Next, pour the mixture into the prepared square pan into a single layer using a spoon. Gently tap the pan on the countertop to remove any air bubbles from the mixture.
Step 8. Cover the fudge in plastic wrap. The fudge needs to be refrigerated until fully set. It should take about 2-3 hours. Then carefully remove the fudge from the pan by lifting the parchment paper or foil. Cut the fudge into 24 pieces with a large, sharp knife.
