- Green Gel Food Coloring. Gel food coloring is the most vibrant.
- White Frosting. You can use store bought or homemade. I like Homemade Cream Cheese Frosting Recipe or buttercream frosting.
- Oreo Cookies. Just regular Oreo cookies and not double stuffed.
- Wilton Gold Color Mist. You can find this at your local craft store.
- Lucky Charms Cereal. This is used as topping and looks so festive and pretty.

Variations
- Make green velvet cupcakes. You can use this red velvet cupcakes recipe and use green food coloring instead of red.
- Use chocolate cupcakes. Of course, they will not be green, but everyone loves chocolate. Just make sure to cover the chocolate completely with frosting.
- Chocolate Gold coins can be used as the pot of gold instead of Oreo cookies. You can find these in a mesh bag on the candy aisle normally.
- Green sprinkles would be a pretty substitute for the Lucky Charms cereal.
- Add a rainbow to the top of each cupcake. You can use rainbow airheads for the topping. The end of the rainbow will look so cute, and you can add marshmallows for clouds.
- Try other types of Oreo cookies. We used traditional Oreos, but you can use peanut butter or any flavor you prefer.
- Skip the gold spray. You can omit using the gold spray and simply use a Golden Oreo cookie. While it will not have the same gold impact, it will still be pretty.
- Add Mint extract. This flavor is perfect for St. Patrick’s Day. You can add a few drops to the cake batter. I do not recommend peppermint extract.
How to Make St. Patrick’s Day Cupcakes
- Step 1. Preheat the oven to 350 degrees. Also, line the cupcake pan with paper liners.

Step 2. Next, mix together the box cake mix based on the instructions on the box. Once combined, add the green gel food coloring on low speed using a stand mixer. Stir to combine mixture and scrape the sides of the bowl. Then pour into muffin tins and bake according to instructions.

Step 3. Once baked, let the cupcakes cool completely on a wire rack.

Step 4. Put the Oreo Cookies on parchment paper or wax paper. Use the Wilton Gold Color Mist and spray the cookies. Allow to dry. Then, turn the Oreo over and spray the other side of the cookie. Step 5. Put the frosting in a piping bag fitted with a star tip. Then, pipe the frosting on each of the cupcakes. Next, top each cupcake with a gold Oreo.

Step 6. Add Lucky Charm cereal to each cupcake.

- Allow Oreos to dry completely. Each side of the Oreo cookies need to dry before turning over to spray the other side.

St. Patrick’s Day Cupcakes
Ingredients
- 1 White Cake Mix
- *Ingredients to prepare the cake mix based on the box
- Green Gel Food Coloring
- White Frosting pre-made or homemade
- 24 Oreo Cookies
- Wilton Gold Color Mist
- Lucky Charms Cereal
Instructions
- Preheat the oven to 350 degrees F and line 2 cupcake tins with liners.
- Prepare the white cake mix based on the instructions on the box. Add the green gel food coloring until the batter is the color of green that you prefer. Then pour the batter into the cupcake pans. Bake the cupcakes based on the box instructions.
- Let the cupcakes cool completely at room temperature.
- While the cupcakes are cool, place the Oreo Cookies on parchment paper or wax paper. Spray them with the Wilton Gold Color Mist. Allow them to dry (5-10 minutes), then turn them over and spray the other side of the Oreos.
- Then place the white frosting in a piping bag fitted with a star tip. Pipe the frosting on the cupcakes.
- Then top each cupcakes with one of the gold Oreos and some of the Lucky Charm cereal (kind of like sprinkles).
